Blackbean soup????

I posted one that a friend gave me on here...under the thread Quick & Easy recipes...

Here you go:

Black Bean Soup:

3 cans Black Beans

2 can of Mexican flavored tomatoes

1 can of corn (drained)

1 can of chicken broth

Dump all into a crock pot and put it on low...for 5-8 hours.

You can added some shredded cheese to the top of your bowl or even add some sour cream.

I also found a really good recipe for black bean Soup on www.bettycroker.com. I use to love the Progresso Black Bean Soup, but they have stopped making it. This is the closest version to it I have found. By the way Progresso Soup and Betty Crocker are affliated.

The recipe for black bean Soup sounds easy and yummy. I was banded on 9-22-05. Do you think I can eat this soup at this point or should I wait? I'm really getting bored with the "full liquid" diet; especially after being on the 10 day clear liquid diet before surgery.

Oh I loooooooooovvvvvvvvve black beans! I avoided them for such a very long time because they sounded yucky. I was so pleasantly surprised the first time I ever incorporated them into a taco!

Now I think if I was forced to choose one food as a staple for everyday eating, it would be my black beans!

Just call me La Seniorita pour favour! (I probably spelled that wrong, and I apologize to anyone of hispanic origin if I totally botched it.) Spanish is next on my list of things to learn!

No one but me likes it at my house so I make a small batch:

1 can Bush black Beans

1 can Water

1 tsp Knorr chicken bouillion (not the cubes) Or, to taste. It has salt/spices in it.

1 small roma Tomato

3-4 sprigs cilantro (just the leaves)

2 tbsp red onion or to taste

Put Beans, bouillion, tomato in sauce pan and boil until tomato is soft. Put onion and cilantro in at very end. I like my onion to have a little crunch, if you don't: cook it with the batch. The cilantro gets mushie/yucky if you don't save it until the end. I never put corn in my soup... but I try to keep low carb.
