Hot Chicken Dip

Hi everyone. Went to a bunco party tonight and made a great low fat dip (we each take appetizers or dessert to share). I adapted the recipe to lower fat ingredients and it turned out delish and no one even guessed it was low in fat.

1 can Members Mark chicken Breast (13 oz), shredded

1 8 oz. pkg. fat free cream cheese, softened

3/4 C. Hellman's Light mayo (1 gram fat per 1 Tablespoon - has green lid)

1/4 C Fat free Mayo

1 C. fat free shredded cheddar cheese

1 can mild green chili peppers

1 Tablespoon Worcheshire sauce

1 jalepino pepper, diced very fine

Shred chicken, stir in softened cream cheese, blending well. Add mayos, shredded cheese and stir to mix well. Add mild chili peppers, jalepino (if desired) and Worcheshire sauce. Spray a small casserole dish with Pam and bake at 350 for 30 mins. or until bubbly. Eat with low fat crackers (I used Special K crackers and they were excellent).

I did the entire recipe on Daily Plate and it came out to 20 grams fat and 900 calories per recipe. It makes about 3 cups total. It's very filling and I think I ate about 4 tablespoons of the dip on about 10 crackers and was very satisfied (which was the majority of my "dinner"). Anyway, it's a good recipe for parties and I hope you'll give it a try.

Hey Miss Linda! This sounds great! What kind of crackers do you use? I have count carbs. Great job on you weight loss!!!

Thanks PJ. I use the new Kellog's Special K crackers -- they are tasty and low in fats and carbs. Hope you enjoy it. Linda

I make something almost like this but I use fat free blue cheese instead of mayo and franks hot sauce instead of worshishire sauce!

Yes, I also have a recipe for Buffalo chicken dip which is what you are describing. This is a bit different from that one because this uses cream cheese. Both are very good.

Here is the recipe I made for our New Year's Eve party. It was quite tasty.

Hot Wing Dip

1 8 oz package cream cheese

2 cups sour cream

1 cup bleu cheese dressing

½ cup buffalo wing sauce

2 ½ cups shredded cooked chicken

8 oz provolone cheese, shredded

Mix cream cheese, sour cream, salad dressing, provolone cheese and wing sauce, blend well. Stir in chicken. Pour into a greased two-quart dish. Bake at 350 degrees for 25-30 minutes or until bubbly.

I've not tried making the low-fat version, but you could by substituting low fat or non fat cream cheese, low or non fat sour cream, light bleu cheese dressing, and if you can find low fat provolone cheese.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
