For anyone on full liquids, I made a great soup tonight--here's the recipe

I'm still on full liquids for another week. I don't know about you, but I'm so sick of Protein Shakes and canned Soups that I needed a break. Not wanting to jeopardize the healing, I don't want to cheat and sneak a mushie. However, I needed some real flavor. Well, I found a great recipe for low fat potato and leek Soup that I made tonight. It did not disappoint. My DH could not believe that it was something I was allowed to eat because it was that good. For anyone else confined to full liquids (even if you're not), give it a try. Here's the recipe:

2 tsp canola oil

2 medium shallots, minced

3 medium leeks, sliced (white and light green parts only)

1 pound Yukon Gold potatoes, peeled and chopped into 1-inch pieces

1 cup fat-free, reduced sodium chicken broth (or vegetable broth)

1 2/3 cups fat free milk (I used evaporated skim to give it an even more creamy texture)

Freshly ground black pepper

Dash of salt

Heat oil in a large pot or Dutch oven. Add shallots, leeks and potatoes, and cook on a low to medium heat for 5 minutes, stirring occasionally. Add chicken or vegetable broth and milk, and simmer half covered on a medium heat for 30 minutes, until the potatoes are tender. Transfer vegetables and some of the liquid to a blender or food processor and blend until smooth. Add more of the remaining liquid until desired consistency.

Ladle into 4 soup bowls; season with black pepper and salt.

Per Serving: Calories 170, Calories from Fat 24, Total Fat 2.7g (sat 0.3g), Cholesterol 2mg, Sodium 211mg, Carbohydrate 29.9g, Fiber 3.7g, Protein 6.7g

That sounds great, I'll give it a try.

I found the V8 Soups are wonderful. I add a can of cheddar cheese Soup to a box of V8 each night (different variety every night) and then I have plenty left for lunch the next day.

What are V8 Soups? I love cheddar cheese soup so I'm ery interested ... the potatoe leek sounds great too!

The V8 Soups look amazing but my doc specifically asked for me to stay away from High Fructose corn Syrup and they all have that in them.

the Soup recipe looks great and pretty healthy too!

I'm in the process of making another Soup right now that I'll let you know about once it's done, for anyone who really misses ethnic cuisine, particularly Indian food. I found a recipe on Bariatric Eating for a bean soup with an Indian flair that I thought I would puree with the hand blender. If it comes out good, then I'll be sure to pass on the recipe. It's got really healthy ingredients and a ton of Protein.< /p>

I think you should start a thread entitled "SOUPS" ... that way they'd all be in one place and easy to find and print out ... I've never been very good at "experimenting" with different ingredients so I'm happy to see that you are ... keep 'em coming!:lol:

      Hi, I’m new here. I’m currently on the liver shrinking diet. So far so good, but I have to say I haven’t found a protein shake I like. Anyone have any suggestions please? My surgery date is September 17th.

        Fairlife Core are by far the best. They taste just as they are - chocolate milk. You can either get the 26 grams or the 42 grams (harder to find and more expensive). For straight protein look at Bulksuppliments.com ..they have really good whey proteins and offer auto ship plus they test for purity. No taste or smell...

        Fairlife has strawberry, vanilla and of course chocolate. No more calories than other protein drinks. Stay away from Premiere, they're dealing with lawsuits due to not being honest about protein content.
