Lunch recipe recs? I'm tired of the same old.

So I thought I found the perfect lunchtime meal. Delicious, cheap, low cal and easy: miso Soup with sauteed greens and tofu or grilled cod.

However, I have now eaten this every day for over a month. I'm so tired of it.

So what is everyone else eating? I'm not a vegetarian, but I'm not a huge meat loving person. Any suggestions would be greatly appreciated.

I love Miso Soup too, but not every day. I am trying to save money to buy a house, so I am now eating my left over dinner for lunch. This is really amazing for me, because I never use to eat left overs. But I don't mind if I can save money to buy a home.

So, I make extra servings of dinner on purpose, so I can take the leftover to work to eat for lunch.< /p>

Examples:

Chili

Taco salad

Baked chicken with veggies

Baked fish with veggies

chicken casserole

Pasta casserole

When I don't have left overs from dinner, I will make lettuce or tortilla wraps for lunch.

Example: lettuce with humus spread on it and meat and cheese placed in the middle with onions and tomatoes.

Example: Multi grain tortilla with humus, meat, cheese, onion, and veggies.

And I can always make a nice salad with the left over meat from dinner.

I have really been enjoying these lately. Low carb, low fat & low cal.

~Spring Mix salad (lettuce)

~1/4 cup shredded cheddar/jack cheese

~few tbs salsa

~2 tbs low fat sour cream

~few tbs fat free italian dressing (I don't use much because of salsa already gives moisture)

~Marinated chicken breast (use whatever you like. I like light ceasar dressing, or just oil w/ some spice).

That's it! Enjoy!!!

Sometimes I just use turket breast if that's all i have on hand. This salad really stays w/ me for hours! It's about 550 cals or so I think.
