Mexican meatballs

ok here goes, this is a recipe I just came up with one day because I was craving mexican food but didn't need all those carbs.....hope you enjoy

Mexican Meatballs

grocery list:

2lbs lean hamburger

one med. onion finely chopped

one small can of green chilies drained

one package taco seasoning

1 can of enchilada sauce

1 can of Tomato sauce

1 cup of shredded chedder or monteray jack cheese

In one bowl mix hamburger, onion,green chilies, and taco seasoning. Form hamburger mixture into medium sized balls and place into your crockpot. Then pour the enchilada sauce and tomato sauce over the meatballs. Cook on high for 4-5 hours or on low for 8 hours. Adjust cooking time according to the size of the meatballs. When they are done serve them alone or over rice and top with shredded cheese. You can also add black Beans and corn to the crock pot to make it a mexican stew.

Sounds good! I don't use the Crock Pot often but when I do I always wish I used it more. I tend to use it more in the winter when using the BBQ grill is out. I will give the Mexican Meatballs a try when I am on regular foods.

Speaking of meatballs........if you make the meatballs and cover them with mushroom Soup, that is out of this world too! My FIL makes them with the golden mushroom Soup and that is wonderful as well!!!!

Meatballs are a really versatile dish that you can suit to your own family's likings. I LOVE meatballs!!!!

Another great meatball option is swedish meatballs made easy:

2 packets of brown gravy mix (the powder kind that you add 1 cup Water too)

3 cups Water

sour cream

meatballs

1 can 4-6 oz mushrooms drained (optional)

make the brown gravy with 3 cups water to thin it out a bit, stir in sour cream to taste (I use 1/4 cup for 3 cups gravy) add mushrooms if desired

pour over pre-cooked meatballs simmer 5 mins.

I always served this with egg noodles, but I made it today and we had mashed potatos instead as noodles are not allowed for me yet.

This dish is yummy and simple, and you can use turkey meatballs and lowfat sourcream and it is super healthy. My family loves it. ~Mandy

The verdict is in, the family loved them, they enjoyed them with sour cream on top and the refired Beans were an added touch. Yummy, it will nowbe in my monthly rotation of meals..Tomorrow night I'm trying the chicken casserole that was posted last week.

Wow! What a great response to this recipe. I am so glad you all enjoyed it. I love my crockpot. Tonight I am making

Sun Dried Tomato chicken Breast :

Four large chicken breasts

small bottle of italian dressing

one jar of sundried tomatoes chopped

1/2 cup of white wine

1/2 cup of chicken stock or veggie stock

1/2 small onion chopped

1/2 teaspoon of dried basil or two tablepoons of fresh

Marinate chicken breast in italian dressing and chopped sundried tomatoes for two hours. Put the chicken breast along with your marinade into the crock pot. Add the onions, stock, white wine and basil. Set crock pot on low for 6-8 hours. Serve with veggies and/or Pasta or what ever you like! Enjoy!

      Two months out from hiatal hernia repair.  Surgeon said to expect a lot more flatulence...something about the 'air' no longer being able to 'burp' out so comes out the other end.  That is my experience but have no understanding of why that swallowed air cannot be 'burped'. ???

        As I understand it since your stomach is smaller and not completely resting against your diaphragm anymore you no longer have the ability to "push" burps out as well. Plus, since its smaller and we don't digest slower the trapped air moves a lot quicker out of the stomach so its no longer available to burp out. Hence the other option for removal.

        Not yet. I was told I only have to do 24 hours of a liquid diet. But I have my pre-op tomorrow so I’m going to confirm if I need to do longer.

      Down 33 lbs and slightly stalled, but I'm gonna reevaluate and push through. I started back to work last week after 2 years of being disabled due to mental health as well as my weight. It's a great job and I'm just so happy to have this opportunity at a second chance at life. Hope everyone is having their best journey ❤️ Together, we got this!
