Need easy appetizer for potluck on Wednesday

My co-workers decided to have an appetizer potluck on Wednesday. I am not really in a cooking mood today and need to make sure there is something there I like to eat. I had been thinking about bringing veggies and hummus. But these people are not health food types.

Does anyone have any other suggestions?

A gal here usually brings a thing called Queso (cheese). Anyway you cook hamburger and when it is done and drained toss it in the crockpot. You then add velvetta cheese and a jar of Picante sauce. She brings that and a bag of Tortilla chips and it like having Nacho's. I will usually have alittle bit of it but cannot each as much as I would love to.. Good Luck

7-layer Bean Dip?

Layer the bottom of a Pyrex dish with refried Beans (my personal fave) then top with shredded cheddar, salsa/picante sauce, choppped onion, sour cream, shredded lettuce, and chopped Tomato. I usually leave off the tomato since the salsa already has it. Basically, anything on a taco, layer how you want to. Bring a bag of chips, easy cheesy and band friendly if you take small bites. Yummy! Good luck!

Buffalo chicken Dip-

Nummy

Ingredients:

2 (10 ounce) cans chunk chicken, drained

2 (8 ounce) packages cream cheese, softened

1 cup Ranch dressing

3/4 cup pepper sauce, such as Franks® Red Hot®

1 1/2 cups shredded Cheddar cheese

1 bunch celery, cleaned and cut into 4 inch pieces

1 (8 ounce) box chicken-flavored crackers

This is for twenty servings--you can scale it back easy enough. I don't own a crock pot, I usually do this in the oven. Just bake it till it's bubbly at 350 degrees for about 15-20 minutes. You can also use low fat cream cheese and low fat ranch dressing--I think the full fat stuff tastes better though.

Directions:

1. Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers.

Spinach dip

1 hollowed out load of pumpernickle

2 containers of store bought spinach dip..(u can buy lite if u want)

fill the hollowed out pumpernickle with the dip, and serve the chucks of bread on the side, with others like pita or a french beguette

Thanks for starting this... I need to make up poo-poo platter items as promised for the Vegas Bash, but I'm making that buffalo chicken dip now!

Can we add some finger foods, please? Meatballs and hearty things to fill up little bands?

If you want something really quick and easy try this:

1 large jar of Pace Picante Sauce

16 oz Cream cheese

Let Cream cheese sit for about 2 hours to room temp, them mix together. This makes a very tasty dip.

Serve with restaurant style tortilla chips........you'll love it!!

Get a box of twinkies, cut each twink into 3, arrange on plate with fancy toothpicks piercing each one.

I promise you there won't be any left!

Since we're on the subject, I need to toss these two sweet treats out. Sounds gross, but someone offered me them both and they are so yummy!

1. Cut big fluffy marshmellows in quarters with scissors. Line a baking tray with Ritz and put one bit of marshmellow on each cracker, then bake till the marshmellows get brown and poofy.

2. Use butter frosting (homemade is best) and frost graham crackers, then break in quarter sections and freeze.

3. Use regular Pillsberry Dough. Make a hole in the center and shape like donuts, then deep fry till brown and poofy, then sprinkle with sugar.

I must have PMS. Band. What Band?

Wrap pickles with deli ham and cream cheese. These are pretty healthy! I soften an 8 oz package of cream cheese and spread it on the deli ham, (I use the hillshire farms smoked ham.) Put baby dill in the middle and wrap. These are really good and easy!!! Lots of Protein and veggies!

Sounds weird but it is really good,

1 large jar grape jelly

1 jar chili sauce

blend together is the crock pot or microwave until smooth, it will look like BBQ Sauce.

Add frozen or premade meatballs (I use turkey meatballs)

If you are using the crock allow them to cook for 1-2 hours before serving on low, if the microwave, heat until meatballs are hot in the middle, I assure you this is good, easy and really popular at parties. We tailgate at the bears games and everyone always ask for the recipe. I love this for parties as it will keep in the crock for several hours, but never lasts that long. ~Mandy

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
