We do this ALL the time to use up leftover ham. I just use it instead of bacon when making Soup. I cook it up with olive oil and onion and garlic, and then add the soup ingredients. So I dont see why you couldnt just puree it into soup.

I'm a bit over hame though, ugh. I made this the other day Jamie Oliver - recipes - jamie (after seeing it on TV) and it was amazing, but a whole ham goes a darn long way in a family of five where the 2 adults are both banded!
