Cooking on weekend for the week?

I am running into a challenge with lunch. I am currently working A LOT.. I get home pretty late to collapse and do it all again the next day. I am managing Breakfast and crockpots for dinner but I just don't have the energy to make my lunch every night.

What are some good ideas of things I can make on the weekend to throw in my lunch bag for the week? I have been thinking of quiche maybe...any other ideas.

Here's a ridiculously quick and easy lunch:

Roll up a piece of cheese inside a piece of turkey (or ham, or chicken ...) and get some of the Hidden Valley Ranch Lite dressing cups, and dip away!

Also, on the weekend, instead of making one big quiche, make it in muffin tins and wrap them individually and freeze. Grab one in the morning, and reheat at lunch.

Since you are crock potting, make some meatballs in there, and throw a couple of those in a ziplock steam bag with some zucchini slices, nuke for a minute or 2, and throw it on a plate. A chunk of mozzarella, and you're set.

Buy some Greek yogurts and some sliced, roasted almonds. Crush up the almonds in your hand, throw them in the yogurt, and enjoy. I get the Chobani which has 14g of Protein. The fruit in there is literally the only sugar I eat, ever. The almonds have about 7g of Protein, so it really is an excellent lunch.< /p>

You can also dip chunks or slices of cheese in hummus, salad dressing, spinach dip, Tomato sauce, whatever you like.

As like the previous poster, I do major cooking on the weekend, parcel the stuff into indvidual servings, and then freeze them. In themroning, I can grab and go! For example: a triple batch of my fav lentil Soup (which I then freeze in individual baggies - takes less room in the freezer) and then pour into a bowl at work; make meatballs by the dozens and freeze them in small bags; the individual 1 0z cheese pieces go with everything; last weekend I made sheppards pie, meatloaf, salmon loaf, and did them all as single 'muffins'....no cutting them out and dishing it out issues either.

I don't have veggie issues like some others - so during the summers when it was warm, I would make a huge salad without the dressing, then divide into little salad bags and take one every morning...i have acquired a stash of the individual little salad dressings and keep them in my desk drawer.

Of course, my downfall - I USED to keep a big bag of almonds, or peanuts or something (in my desk), but they became an addiction so that's not done anymore! This could also be done with raisins.

i do a LOT of cooking on the wkend, ususally due to family & friends wanting a break from the city.. eitherway, i like to have healthy food on hand at all times - and for me that requires a bit of prep & planning.

friday or saturday i hit my local farmers market / grocery store, and plan on making at least 4 meals for the wk - while cooking sat night dinner.

some type of Soup or chilli / homemade hummus / grill up some chicken breasts are easy to do in advance. i also will hit my favorite sushi bar and get some salmon/tuna/crab and such to prepare throughout the wk.....crab cakes are an easy recp to make & freeze well & i love a good spicey tuna roll.

aside from the fresh veggies & fruit, you can get some frozen edamame, have raw nuts/jerky handy, cheese & crackers....lots of choices. but for me, if i don't plan - i'm likely to make poor choices on the fly..

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
