Nutritional value of beans and some recipes please!

i posted "black eyed pea cakes" that i make every single week. Just do a search. Love them.

I also make black bean cakes every week. The recipe is:

Black Bean Cakes

Lime Sour Cream:

1/2 cup reduced fat sour cream

2 teaspoons fresh lime juice

1 small fresh jalapeno pepper, minced

salt to taste

Bean Cakes:

2 tablespoons olive oil, divided

4 green onions, thinly sliced

6 cloves garlic, pressed

2 fresh jalapeno peppers, finely diced

1 tablespoon ground cumin

2 (14.5 ounce) cans black Beans, drained and rinsed

salt and black pepper to taste

2 cups grated raw sweet potato (i microwaved these for a minute to ensure they were cooked)

1 egg, lightly beaten

1/2 cup plain dried bread crumbs (i used italian because it's what i had)

To prepare lime sour cream, mix the sour cream, lime juice, 1 small minced jalapeno, and salt together in a small bowl. Cover, and refrigerate.

Heat 1 tablespoon olive oil in a small skillet over medium heat. Cook green onions until softened, about 1 minute. Stir in garlic, 2 diced jalapenos, and cumin; cook until fragrant, about 30 seconds.

Transfer contents of skillet to a large bowl. Stir in black Beans, and mash with a fork. Season with salt and pepper to taste. Mix in sweet potatoes, egg, and bread crumbs. Divide into 8 balls, and flatten into patties.

In the oven, set cooking rack about 4 inches from heat source. Set oven to broil. Lightly grease baking sheet with 1 tablespoon oil.

Place bean patties on baking sheet, and broil 8 to 10 minutes. Turn cakes over, and broil until crispy, about 3 minutes more. Serve with lime sour cream.

*I also added a little light cheddar cheese on top (and one time i added light mexican blend cheese). I'm a cheese freak so i liked it better this way.

Oh My Gosh!! That sounds soooo good!

I was JUST at the grocery store and hate to go but this is making me want to run back to the store! So not going to, but we have to go back on Sunday. I'll pick the stuff up then.

I use Beans in alot of recipes. I throw them in Soup, salad, scrambled eggs, just anything to boost my Protein. I always have black beans on hand. I had some in our chili tonight! I don't know if one is really any better than the next. I just know they are all good. I was told to rinse them if you use from a can!!

The cakes sound delicious...I shall try them this weekend.

I use Beans ALOT...baked Beans, boiled beans, I bake with them (yes, lots of recipes use beans as a way to reduce fat eg. black bean brownies), I use them in chili's, in sauces, as a snack....

If you make baked beans, you can substitute other types of beans - eg lima beans makes an excellent change from pea beans.

thanks. yeah i really like Beans and when made as "cakes" they taste fattening lol. really. i feel like i'm eating fast food and it keeps my head on straight. plus they reheat really well.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.

      Woohoo! I have 7 more days till surgery, So far I am already down a total of 20lbs since I started this journey.
