Easy veggie side dishes?

Anyone have some good ones to share? Right now, I make corn and green Beans...that's it. I would especially love ideas for using frozen veggies as they seem to be the least expensive/fresh tasting. I bought some frozen edamame and then had no idea what to do with it! Same with sugar snap peas!

HELP!

Actually, corn is a starch. It's a grain and high in carbs. I would only recommend it occasionally. There are so many fabulous veggies out there, many of which are great on the grill. I invested in a grilling basket. I toss them lightly with olive oil and seasonings and set the basket on the grill. Stir around until soft and tender. The flavor is so much better. Initially though, when I needed softer veggies, I liked squash (all kinds), eggplant, asparagus tips, and brocolli tops. As I progressed, I added more. I love vegetables, so I like them just plain steamed, but you can experiment with all kinds of seasonings and toppings.

I like to slice up fresh seasonal veggies in some foil along with some reduced fat margarine, salt, pepper and garlic powder. Close up the foil and leave in on the grill while you grilling the main Protein, or stick it in the oven while baking other stuff. It's very forgiving on temp and time. Open up the foil and drain the liquid off as it's mostly the margarine. Because it steamed itself it will be pretty soft and easy to eat.

I use zucchini, summer squash, carrots, onions, asparagus, broccoli, red potatoes (just a bit!), cabbage, just whatever looks fresh and is on sale at the store.

I love roasted veggies...a little olive oil and S&P, 350 for 20-30 minutes. My daughter LOVES green Beans that way.

I also roast asparagus...olive oil, salt and lemon pepper. The last 5 minutes of cooking, I sprinkle Parmesan cheese over them.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.

      Woohoo! I have 7 more days till surgery, So far I am already down a total of 20lbs since I started this journey.
