AmyBee 0 Posted September 25, 2008 Do you weigh your fish? And what piece of chicken do you use for yourself? I really like skinless chicken breast, but I am afraid that will cook too dry. I normally buy wild caught sockeye salmon from costco. It comes already cut up in 5-6 oz portions. When I cook it up I only eat half of the portion for that meal and save the rest for lunch or dinner the next day. I buy boneless, skinless chicken breasts and haven't had a problem yet with it being too dry. Since being banded I marinade my chicken breast in a little olive oil, lemon juice or balsamic vinegar and spices. That keeps the chicken from drying out when I cook it on my gril panl. I also buy rotisserie chicken which is moist, easy and convenient.
rhondalou117 1 Posted September 25, 2008 Water, water, water...Crystal light, south beach tide me over-has protien, special K add ins-has protien. double skim milk pudding-FF SF pudding made with powdered milk mixed with skim milk instead of the directed water to boost the protien, with sliced bananas-yummm. Rotessoire <sp> chicken-honey jalepeno is my fave. At HEB, I pull off all the meat weigh out my portions and put them in the fridge for easy meals. Just for one-veggie servings. FF refried Beans with low fat cheddar and pace taco sauce-it is shut up good. Canned peaches and low fat cottage cheese.< /p>

I love salmon and had found a 3 pound reclosable package at Wallyworld with precut pieces. I will have to remember to stock up for myself (no one else in my house will eat it). Thanks so much for the information!
Jodi_620 37 Posted September 25, 2008 Another good marinade is 1/4C Italian Dressing and 1 TBS Dijon Mustard mixed together. Marinade the chicken for 30 minutes...works great on pork too!

That sounds yummy. I love Dijon mustard anyway. I have so many ideas to try once I can eat food again. I am going to be stuck on a graduated diet for the next 4 weeks.
Fanny Adams 7 Posted September 25, 2008 I have many of the things already mentioned but my favourite is a huge zip lock back of pre-cooked, semi-peeled jumbo prawns in my freezer (you guys call em shrimp). When I can't think of anything else for dinner, I'll grab 4-6 of those and chuck em in a non-stick wok with whatever veges I have on hand and different flavoured sauces - instant stirfry.
