My mom asked me today if I knew of anything I could have to Celebrate (since obviously i cannot have cake!!). I thought pumpkin pie, but i looked it up and it doesn't seem healthy. luluc 6 Posted September 18, 2008 hi victor, happy bday!! my mom was a big fan of ricotta pie growing up (big easter dish) - it was so delish, in fact i just might make one this wkend for a diner party...got me thinking. it should be fine for you if your in the mushie stage, plus has some Protein w/the ricot. then again, there's always jello....LOL Share this post Link to post Share on other sites
aubrie 6 Posted September 18, 2008 You CAN make a very healthy pumpkin pie. Just substitute fat free consdensed milk and splenda for the sugar. The eggs and pumpkin are perfect for you. Just don't eat the crust. There's no calories per se in the spices. BUT.... will you be at the mushie stage by then? 6 days out? I was still on full liquids. In that case, decorate a Jello mold!!! I will have to try the ricotta, never heard or had anything like it, sounds interesting though!! :thumbup: I did find some healthy recipies for pumpkin pie as well. I think the pumpkin may need to be more "whipped" however. I am tolerating foods pretty well, but I am also being careful as to not rush what I eat.
