Deceptively Delicious

I thought I would post a new thread here with one of the recipes I mentioned in the main thread in case anyone wanted to eat a veggie and dessert at the same time! This is the Brownie recipe - my kids love them. I do think you can sort of "feel" the spinach a bit, but the do still taste good. And if a child that only likes 7 foods will eat it, it has to at least be OK. We have made it like it reads below with spinach and carrot puree. We have also made it with carrot and sweet potato.

Makes 12 brownies

Ingredients:

Nonstick cooking spray

3 ounces semisweet chocolate

1/2 cup carrot puree

1/2 cup spinach puree

1/2 firmly packed light or dark brown sugar

1/4 cup unsweetened cocoa powder

2 TBS trans-fat-free soft tub margarine spread

2 tsp vanilla extract

2 large egg whites

3/4 cup flour

1/2 tsp baking powder

1/2 tsp salt

Preheat oven to 350. Coat 8x8 baking pan with cooking spray.

Melt chocolate in double boiler or over low flame.

In large bowl, combine melted chocolate, vegetable purees, sugar, cocoa powder, margarine, and vanilla, and shisk until smooth and creamy.

Whisk in egg whites. Stir in flour, baking powder, and salt with a wooden spoon.

Pour the batter into the pan and bake 35 to 40 min. Cool completely in pan before cutting (to make sure spinach flavor disappears).

Sprinkle with powdered sugar if desired.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
