Yvonne72 0 Posted July 10, 2008 OMG- My Mom came to visit me a few weeks ago and made this dish for me. It's great! (Be sure to weigh it out - definitely a slider!!!) Slice an eggplant- very thin... Lay out slices on a baking sheet sprayed w/ cooking spray... Take a brush and apply VERY small amount of EVOO or Veggie Oil to the tops... Bake until tender... (just about 10 minutes in a 350 degree oven) (you can flip them 1/2 way through) While that's in the oven- Make a Marinara sauce... (1 tbsp EVOO- 1 large can Crushed Tomatoes or Tomato Sauce- Garlic- Basil- salt & pepper to taste) Heat to boiling and it's done! In a square pan (or lasagna pan if you're making a lot) Put small amt of sauce (just enough to cover the bottom) Layer of Eggplant Sauce Eggplant etc...(should make 3 or 4 layers) Sprinkle top with Parmigiana cheese Bake until browned (about 20 minutes) It's "DIET"- because there is no Mozzarella - Ricotta - Breadcrumbs or Deep Frying!!! showboatgirl 0 Posted July 13, 2008 My dietian said that bariatric patients should never eat eggplant. I think it can cause a blockage.
