One of my favorites is to take the DRY italian dressing mix and sprinkle it over boneless skinless chicken breast drizzled with olive oil. Bake it like you would bake any chicken. YUMMY

I am not a fan of chicken breast, even the boneless skinless kind. It's difficult to cook just right without drying it. Also, when reheating for leftovers, it gets even more dried out in the microwave.

Here's what I have found as a winner:

Do you have a Sam's Club near you. If so - they have the BEST Protein for bandsters!

Chicken Sausage with Spinach and Asiago cheese

It's high Protein, low calorie.

Here's my recipe:

- Remove the chicken sausage from the casing (5 links) and break into small pieces. You'll see it will break apart as you remove the casing.

- Cook the meat over medium heat in a skillet with a little bit of olive oil.

- Add garlic or garlic salt if you wish

- Remove meat once it's cooked (don't cook too long - don't want if burnt)

- Mix with 1.5 cups cooked rice. White or Brown.

- Add any other ingredients you wish. I add FF Sour Cream. Other like grilled peppers, a little butter, etc.

*Split into 5 portions. There's 5 meals! You will notice the meal is much more chicken than rice. Just a little rice is in there. It heats up well too.

Boneless/Skinless chicken breasts

1 can Golden Mushroom Soup

Put both in baking pan and place in overn on 350 degrees and bake until done.

Very Yummy and gravy to help the chicken slide down.

We also take Boneless/Skinless chicken breasts and make chicken strips out of them.

Cut them thin, season to taste, in skillet but butter or margarine and add chicken, put in a little soy sauce and cook until done.

Chicken Bites

Again Boneless/skinless chicken, cut into nuggets

in ziplock baggie place equal portions of brown sugar and chili powder

Place nuggets in bag and shake until well coated, place on baking sheet and put in 350 degree oven bake until done about 10 minutes. You can also wrap bacon around the chicken before baking for a little extra crunch.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
