Teanne 0 Posted March 29, 2008 As a Texas girl I used to LIVE on mexican food and thats probably why I am fat. But I want to make some chicken enchiladas with corn tortillas this week. Anyone tried these. Just diced chicken, enchilada sauce and cheese. I know flour tortillas are a no-no but what about corn. Share this post Link to post Share on other sites
Pizzaman 0 Posted March 29, 2008 I ate enchiladas on a business trip (one of each, chicken, cheese, and beef). I ate slowly and was able to easily get it down. It probably wasn't an optimal meal in terms of nutrition, but I didn't put on any measurable weight as a result of it either. I wouldn't eat it too regularly. Pam-Dallas 0 Posted April 2, 2008 What about trying whole wheat (high Fiber, low-carb) tortillas? I have used these to make sandwiches for lunch and have had no problem eating them. I just eat slowly, and it is a great source of fiber. White flour tortillas get stuck and make me sick, but I am fine with the whole wheat ones. Hope this helps. VegasGrace 1 Posted April 2, 2008 Had to pop in as your title made me hungry! I love mexican food! Always ask your doctor if you have a question, but I don't have a problem with the flour tortillas. I use corn chips with my salsa. One of my favorite things to eat, discovered it since being banded... quesidillas - however it's spelled. I make them w/ a quesa. maker from Macys. Flour tortilla w/ a mixture of chicken, salsa, onions, peppers fried in a pan then top w/ jack cheese and another tortilla.... my family loves them! Share this post Link to post Share on other sites
