Creamy Spinach Chicken Salad

Georgia girl - what a great recipe. I hosted a family reunion yesterday, and used two variations of the salad fore rave reviews. The deviled eggs filling (with a little crumbled bacon and a few extras) and as a veggie dip ... two different great tastes, easy to make, and of course band-friendly. Thanks. :)

Cool! I'm glad your family liked the recipes! I use this spinach dip ALL THE TIME on lots of stuff. I always substitute mayo for the spinach dip in just about everything.

I loved your idea and made a mexican version. I took the jarred tostitos white queso dip and added some to shredded rotisserie chicken, chopped frozen spinach, canned black Beans (drained) and chopped sweet onion. Tastes like the inside of a scrumptious enchilada.

Georgia girl, I just have to tell you again how great your Creamy chicken salad is. I have had to stock up on this stuff, because my husband is making sandwiches out of it. He loves it!!! I find myself looking for all your posts for your receipes. I told my husband about your slow cooker meatloaf. He wants me to make it this weekend. So I'm making a grocery list. I noticed your age, same as my daughter. She used to live in Hinesville,Georgia. Her twins were born in Savanna. Georgia is a beautiful state, love it there. (Still waiting for my insurance to approve me. I'm hanging in there.)

Hey Jo Anne! I'm glad you like the recipe. I stock up on the dip too! Before I got good restriction I made sandwiches with it too. I use it A LOT! Let me know how you like the meatloaf.

Georgia is a beautiful state. I've never been to Savanna but I've always wanted to vistit.

OK people - stop hoarding!!! I had to go to 4 stores this weekend to find the dip - Walmart and my local grocery stores were all out of it! Of course, I then took the last 4 jars that the one store had...:blush:

yeah here also. I have been buying the big jar and leaving it at my office with can chicken there as a quick lunch if i don't pack one. Well the dip keeps disappearing everyone at the office loves it banded or not.

I've been adding different things to this salad to give it a little variety. Sometimes all, sometimes a couple of the following, depending on my mood:

-green onion

-pineapple (I prefer crushed, juice drained so as not to make the salad too soggy)

-cranberries (I've discovered orange flavored which is nice)

-almonds (dry roasted in a pan)

-walnuts (as above)

-celery (very finely sliced)

When I'm making this salad for myself I'll just add a tablespoon or so of a couple of the above. If my family wants to share I just add more until there's enough for all of us. :thumbup:

The added ingredients ensure there's a surprise in every mouthful. I have to be careful though; it can quickly become very addictive. :mellow::drool::cool2:

Oh Georgia Girl, this pizza receipe will be next. Your crockpot meatloaf was sooo good!!! My husband loved it, I only had a little since I'm still trying to lose some more weight before surgery. We froze half of it, for later. My lapband coordinator just got my papers faxed to my insurance today, she has been waiting on my Primary Drs. office to send them. She said it shouldn't be too long now. I was thinking maybe you should write a cookbook, I would buy one!!!!!

LOL, Jo Anne! I'm glad you liked the recipes, but I don't think I would be very good writing a cook book. I just love to play around with food. Sometimes my "playing around" turns out pretty bad....just ask my hubby, lol. If I make something that turns out bad, I usually play with it until it's good. I can't leave it alone! I guess it's the perfectionist in me, lol.

Frustrated~ I like almonds in mine too. I've tried dried cranberries and they're good too. I haven't thought about pineapple though....I bet that's really good. I'll have to give it a try!

I will be trying this this weekend. Sounds delicious. I love coming up with new recipes. Ever since getting banded, I've been on a Soup kick. Really fast and great tasting, and low calorie. Taco soup, white chili, shrimp veggie stew, cioppino (basically broth based)

        Not yet. I was told I only have to do 24 hours of a liquid diet. But I have my pre-op tomorrow so I’m going to confirm if I need to do longer.

      Down 33 lbs and slightly stalled, but I'm gonna reevaluate and push through. I started back to work last week after 2 years of being disabled due to mental health as well as my weight. It's a great job and I'm just so happy to have this opportunity at a second chance at life. Hope everyone is having their best journey ❤️ Together, we got this!

      Hi everyone! I’m brand new here. I just went through all my pre-op requirements per my insurance company and now everything has been submitted and I’m just waiting for final approval and my surgery date. I’ve been doing research, watching YouTube videos, TikTok’s, ect.. trying to prepare my mind and what to expect so I’ll be ready for the surgery. I was so sure and so set and so ready and excited. However, now that I’ve done everything & it’s almost here, I am sooooooo scared! I know why I want it bc I’ve tried everything and I just don’t feel like I can lose weight by myself. I’m tired of being overweight my entire life. I’m miserable, but I keep psyching myself out afraid of GERD bc I know how that can be and I don’t want to have to get a bypass after already gaining the courage to even get VSG. I’m scared of complications like I’mgoing to regret doing it and be depressed that I didn’t just be more disciplined and try again to lose the weight on my own even sitting here typing this knowing in my mind i just can’t and don’t possess the discipline. I’m also afraid I won’t be able to handle the restrictions of the sleeve. What do I eat? I don’t know how to eat healthy really and don’t enjoy healthy food. I don’t know how to do this! I feel so defeated!Someone tell me they felt anything similar to this or am I not ready? I thought I was. I am so tired of being sick and tired and so tired of myself and so tired of being stuck and stuck in this body and somebody different on the outside from what I feel inside. I just want to ball up and cry.

        Am feeling this right now. My surgery date is 4/1. Sign the consent tomorrow. I feel like I overloaded myself with too much info, too many opinions. Got to the point where I was wondering if I should do this. Then I thought of my reasons for taking this step and that settled my nerves. Still get moments of doubt but am striving forward. Am just going to follow my book from the surgeon. Joined this because I was told by my dietician that I should do this for support
