Sauteed Zucchini with Tomatoes and Garlic

I made up last night. It turned out really good.

3 medium size zucchini sliced thin (I use a mandolin)

2 cloves garlic

1 teaspoon dried italian seasoning

1 can of diced tomatoes (regular size, I'm guessing 14 oz)

Parmesan cheese for topping

Heat a small amount of EVOO in a sautee pan, when heated add the 2 cloves of minced garlic. Add italian seasoning to pan. Saute about 2 minutes (just don't burn the garlic!) Add thinly sliced zucchini to the pan. Saute for about 8 minutes or until "crisp-tender". Stir in the can of tomatoes. Let that cook for about 5-10 minutes, stirring occasionally. Salt and pepper to taste. Sprinkle Parmesan cheese over it in the pan (as much as you want according to your calories!).

Absolutely, Thanks for all the recipes you've posted GeorgiaGirl, I haven't tried them yet because I just stumbled across this area. I will try and get some of my other recipes on here soon.

I've made something similar to this but used a cheese grater and shredded the zuchinni in. It was very good, I think I also added onion and used fire roasted diced tomatoes and some other seasonings such as chili powder and cumin. Just an idea, it is very tasty,

That sound really good. I used to make a zucchini recipe similar to this that is soooo loaded with calories it's no wonder I gained weight, and to think I thought I was eating healthy!!!

I am so glad that the fresh veggies are coming on strong now. I went to the farmers market in town today just for some green Beans and ended up with basil, beans, sugar snap peas, several bunches of lettuce, red raspberries, beets, onions and garlic scapes. I just couldn't control myself :frown: What a great thing to not be able to control. We'll be eating well this week!
