Crust-less Spinach Quiche

This is perfect for those who are trying to watch the carbs and it is soooo gooooood!

INGREDIENTS

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 5 eggs, beaten
  • 3 cups shredded Muenster cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.
  2. Heat oil in a large skillet over medium-high heat. Add onions and cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated.
  3. In a large bowl, combine eggs, cheese, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan.
  4. Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.

Instead of one large quiche, I pour the mixture into the bottoms of a greased muffin pan, a little less than half full. It makes bite sized portions that are perfect for a party. Easy and delicious. Oh, I use whatever shredded cheese is on sale at the store.

You could also add a little bit of crumbled bacon to this and it would be good. It's a little high in fat, but if you are strictly doing low carb, it would work.

Chopped Canadian bacon would be a low-fat alternative to the crumbled bacon. Could you use eggbeaters instead of regular eggs?

I don't see why you couldn't use eggbeaters, I've never used it, so I don't know how much. Let us know how it turns out if you try it!

I will try it with the eggbeaters and let everyone know how it turns out. You know, sometimes that stuff doesn't cook right like the good wholesome God made food like REAL, whole eggs.< /p>

Hi fellow banders,

Could everyone put in their favorite recipe's for all to share. I think of everyone on this website posted their favorite recipe we could all benefit from it. I know I've posted 2 of my favorites, low fat pizza and low fat enchiladas. I think this section of this web site is fantastic. I'm always searching for new recipies for variety. I know many of you must have something you could post. So, post early and often!

Looking for help here so we all have variety in our daily lives.

Hey Debbie,

I just posted a recipe for Ratatouille. You should try it. When I first saw the recipe I thought It sounded healthy but not that appitizing but since I have to start eating better, I gave it a try and it tasted great.:)

i tried this with 2 eggs and a 1/2 cup egg beaters, 1/2 cup flour, 1/2 teaspon baking powder, 1 1/3 cups skim millk, onion, bag fresh spinach, and fat free feta cheese. i cooked the onions and spinach. then i let it cool. meanwhile, i mixed the other ingredients..i put a dash of cayenne pepper (very little) s & p to taste. put the cooled other ingredients in there and mixed (no feta yet). then i put it into a pam'd pie plate and topped with ff feta. it was very good. i cooked for 25 on 400, but i wish i let it go a few more minutes so the edges of the quiche were like crust. i didn't miss the meat at all...
