Cut your regular eggplant down the center length wise. Soak in salted Water for about 30 minutes and then boil until soft and pulpy. Peel and cook 1 small potato in water until soft. Brown 1/2 to 3/4 pound hamburger very well and pat dry with a paper towel. Add 1/2 small onion chopped, about 4 to 5 cloves of crushed garlic, some parsley, oregano and lots of thyme. Cook until onions are tender. Add the potato and mash into the mixture. This helps hold it together. Then add the pulp from the eggplant. Mash well. Save the eggplant skins. Mix all this up together and then gently stuff back into the skins. they will be thin and fragile, so be gentle. Sprinkle with parmesan cheese and Italian bread crumbs and bake at 350 for about 45 minutes. HEAVEN!!!!!

ta337 have you eaten any boiled seafood since you have been banded. I live in LA also and was curious how being banded affects boiled seafood consumption.

My 23yr old Son asked me; How would a Catholic living in LA survive during Lent if they could not eat boiled seafood? Wasn't something I really thought about when changing eating habits.

I sure have. Sometimes, if the crawfish is really chewy and I'm tight, I have trouble with that, but I have eaten boiled crabs. I think shrimp are the hardest to eat; they're manageable but you have to chew a lot due to their texture. Of course, the little tiny ones are easy and you can get the flavor even if they totally "dissolve" in a stew or something. Really, it all boils down (no pun intended) to how tight you are. Do you like dried shrimp? I've made some really tasty cream based Soups with that before... oh, and seafood gumbo is easy. I actually used my crock pot to make a seafood chowder with canned seafood... talk about delicious. I'm such a foodie... one more suggestion. If you like shrimp molds, you can do that and even add a little unflavored Protein mix in it for a little more boost.

Thanks for the info. I am so glad that we still have options pertaining to Boiled seafood.

Personally I have always prefered "Gumbo sized Shrimp" to the larger 10-20 count. No matter how large shrimp are cooked, they will always be tougher than the smaller gumbo shrimp.

I like your suggestion about the Protein in the shrimp mold. Any other local food ideas you have please let me know.

Good luck on your Big day Monday. I'm a member of the "Merry Losers" and I'm also from Louisiana. Shrimp are hard for me to keep down...of course I just had a fill and I'm pretty tight right now. Also, Jambalaya (rice) is not too band friendly.

I will try to post Monday when I get home to update everyone on my status. I am ready for the surgery to start now. the sooner the better.

This site has been a wonderful source of info. The support from those who are already banded has helped all of us in the process of being banded.

As my Grandmother use to say "Contre la force y a pas de resistance".

        Fairlife Core are by far the best. They taste just as they are - chocolate milk. You can either get the 26 grams or the 42 grams (harder to find and more expensive).
