Sunshine Princess 203 Posted June 2, 2022 In a week and a half, I'll be able to introduce vegetables back into my diet which I am SUPER excited about. Does anyone have any good ideas for what vegetables to reintroduce and methods of preparation? I've been advised to avoid a lot of fibrous veggies (broccoli, cauliflower) at first and to not eat raw vegetables. catwoman7 11,221 Posted June 2, 2022 cooked for sure. It took awhile before my stomach could tolerate raw vegetables. Cooked zucchini should work. Or cooked carrots. lizonaplane 1,613 Posted June 2, 2022 I had sauteed zucchini at 2-3 weeks with no issues. It was delicious. I was told to avoid celery, but I was able to eat whatever else I wanted at 3-4 weeks. I am 9 months out and I still struggle with iceberg and romaine lettuce. I haven't tried celery, but I don't like it anyway. I HATE CELERY!!! Celery and green bell peppers are the only two vegetables I will not eat. The celery strings are called butt floss in my household. ANd for all that crunch, I expect a little bit of flavor besides Water. And green bell peppers are what bitterness tastes like. Spinoza 1,453 Posted June 2, 2022 My first veg were carrots or else broccoli, cooked really well. Then probably onions and leeks and mushrooms. I am so lucky - I can eat absolutely everything now, it's just a matter of prioritising the space! But my stomach was totally fine. Tonight I had twice steamed broccoli that was cut up, and again I chew, chew, chewed and it was also fine. But also remember to eat slowly. It'll feel fine AT FIRST if you eat quickly, but then it all settles in your stomach and YIKES. Not fine. Arabesque 7,442 Posted June 3, 2022 I added vegetables like carrots, Tomato (not a vege I know), celery, onion, capsicum, mushrooms, to Soups & stews/casseroles from soft food. Just let them simmer away for ages. The first vegetables I ate as a side were shredded cabbage & cauliflower. I microwaved them in a little Water & butter. Then I added green Beans. I tried other vegetables but they didn’t taste good (even through they were my favourites) for a few weeks. Then it was asparagus, sugar snap peas, broccolini, spinach, etc. I do tend to microwave my vegetables to keep them moist. I didn’t & still don’t do potato as they’re too starchy & tend to sit heavily but I have had a bite or two of roast pumpkin over the years. 1 GreenTealael reacted to this Share this post Link to post Share on other sites
