MOM'S cheese PIE
Low carb cookie crust, optional (I used Ellie's Peanut Butter Cookies)

Dash salt

Topping (optional)

Topping:
1 cup sour cream
2 tablespoon granulated Splenda or equivalent liquid Splenda
1 teaspoon vanilla

Crust:
1 1/2 cups Ellie's Peanut Butter Cookie crumbs, about 16 Cookies or 5 ounces
6 tablespoons butter

If using a crust, melt the butter in 9 1/2-10" glass pie plate using a microwave. Add the crumbs and mix well, then pat over the bottom and about 1 inch up the sides of the plate. Press firmly and evenly into the pan. Freeze while preparing the filling.

In a medium bowl, beat the cream cheese with an electric mixer until smooth. Add the Splenda, salt, eggs and vanilla and beat just until well-combined. Pour into the crust and bake at 350º 20 minutes. At this point the filling should be pretty much set but not too firm. Remove from the oven and let cool 15 minutes. Meanwhile, raise the oven temperature to 450º. Mix the topping ingredients and spread over the pie. Bake 5 minutes. Cool, then chill well before serving.

Makes 8-12 servings
Can be frozen (see note below)

With granular Splenda:
Per 1/8 recipe: 484 Calories; 45g Fat; 11g Protein; 10g Carbohydrate; 1g Dietary Fiber; 9g Net Carbs
Per 1/12 recipe: 323 Calories; 30g Fat; 8g Protein; 7g Carbohydrate; 1g Dietary Fiber; 6g Net Carbs

With liquid Splenda:
Per 1/8 recipe: 469 Calories; 45g Fat; 11g Protein; 7g Carbohydrate; 1g Dietary Fiber; 6g Net Carbs
Per 1/12 recipe: 313 Calories; 30g Fat; 8g Protein; 4g Carbohydrate; 1g Dietary Fiber; 3g Net Carbs

The recipe I use is above and it is sooooo good. I make a nut crust using ground up almonds and pecans, melted butter and splenda instead of the cookie one because I like it better. Sometimes, before baking I take part of the batter and make it chocolate and for a marble cheesecake. Topped with some fresh or frozen berries and sugar free Reddi Whip and you would swear it was the real thing. This comes from a site called genaw.com/Linda's Low Carb recipes. It is pretty high in fat which may be hard since you have GBP and no gallbladder but I would think you could get reduced fat cream cheese. I only eat about 1/12th of it at a time and no problems.

No, this was never an issue for me (luckily). Going out/parties/get-togethers/holidays and all the food associated with it didn't affect me thank goodness. In the beginning, I was just glad to be around friends and family with my water bottle and packed food, thank goodness...I would have hated staying home just to avoid food-related events (read: everything).

Thanksgiving is easy for me, always was. I don't like most of the "naughty" foods. Halloween and Christmas were my danger zones.

We already had our Thanksgiving last month, and you know what? I didn't even have any stuffing, and it is historically hands down my favourite thanksgiving menu item!! I miss my aunt's stuffing which had turkey innard bits in it. Note to self: find a low-carb stuffing recipe...

I’m eating stuffing, not low carb, real croutons with butter, celery, onions etc..

Ive quit smoking, drinking and now eating for pleasure during my lifetime.

My day is planned and nothing is coming between myself and my stuffing.

Honestly thanksgiving food doesn’t tempt me all that much.
It’s the freaking appetizers that try to do me in.
This year I have to work 9-2, which means the fam is eating right after I get home from work which means no appetizer time for me.
I will be making Swedish meatballs and ham and cheese roll ups instead of chips and salsa and 7-layer dip.
Stuffing I can live without, but I got 4 bottles of gewurztraminer to go with turkey and I’m going to try very hard to limit myself to 2 glasses of that and I found a nice tawny port that I’ll enjoy in lieu of dessert.

Catching up- been moving my elderly parents and I am tired!!!!

Band I am most grateful for:

I like a some of really every type of music, jazz, heavy metal, rap, big band, country etc. so this one is so hard. I have hits from every decade on my playlist- from the 1920's on up!

My bands in high school were Guns N Roses, AC/DC, Def Leppard and so on. I still crank them way too loud in my car when they are on. :)

For sheer, all time great I'd have to pick Louis Armstrong though. His rendition of What A Wonderful World reminds me of singing along as I rocked my sweet babies to sleep.

Job:

Since I am currently at home, I grateful for all of it!

When I was teaching special education I loved to see my kids, who were often overlooked due to their differences, find their own way to shine. They taught ME so much about finding joy right where you are.

Trait:

I am grateful for my sense of humor. I always wonder how people without much of one manage to get through this world!

B side questions:

I am too early out to say for sure if I will eventually get hangry, I still forget to even eat right now. (Things I never dreamed I would say, lol.) I know this will change with time, so we will see.

Not worried about Thanksgiving food for the same reason.

However, that cheese pie recipe may change my mind... drool.

Splurge item: I’m not sure..I have a Prada purse that cost an arm and a leg and it’s held up well over the years. I also bought a crazy expensive chair years ago that I still love.

Maybe it’s just my bedroom set. I always wanted a bedroom set when I was a kid and I felt so grown up when I bought one.

Im behind here, Band I’m grateful for. Probably Earth Wind and Fire, they’ve never let me down.

My most recent splurge item that is in my house, is Hazel my puppy. I'm super grateful for her presence as well as her older fur sibs.

Not worried about Thanksgiving...my favorite part is when there are brussel sprouts.

Day 19: What splurge item to you own that you are most grateful for?

I'd have to say the upgraded features package we got on my car. Totally don't need any of those features, but man, now that I have them, I dunno how I can drive a car without.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
