Making the second meal in our new air fryer. It's going to be homemade low carb chicken fingers, veggie tots and some green Beans.

I'm still not able to have any meat yet, I think it starts in the next stage for me, things like tuna. But the other day I made the best veggie dish. Maybe I was so deprived of home cooking that it felt like the best veggie dish I ever tasted, but it was good :)

3 med zucchini's - sliced med thin
2 med tomatoes - wedges about 8-12 per tomato
olive oil cooking spray

Place zucchini in pan and lightly spray with olive oil. Then add Tomato wedges, add salt and pepper to taste (I like it heavy on the pepper). Cover and simmer until desired tenderness.

Enjoying cooking more sous vide this weekend.

Made egg bites yesterday morning for Breakfast. Made halibut and mahi mahi for dinner tonight with plenty left over for the next few days. Having some tri-color quinoa (not sous vide) on the side.

Did salmon last weekend. The fish turns out so soft and moist in the sous vide.

LVB - what attracted you to Sous Vide? Is it better for us? Does meat taste good that way??? I like the roasty taste it gets in the oven.....

For meat, I like the fact that if you cook a piece of fish or steak at a certain temperature, that it's cooked evenly throughout to that temperature. For chicken and steak, you need to seer it after it cooks because it looks a little pale, but the fish is great right out of the sous vide. The fish is very moist and flakey.

I love the egg bites in the sous vide. If you have ever had the Starbucks egg bites, you can make them yourself and decide exactly what you want in them. You can make them up on the weekend and eat them for the week. Or, this past weekend I tried cooking them, freezing them, and then vacuum packing them for the freezer so they will be ready for the weeks when you don't have time to cook them.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.

      Woohoo! I have 7 more days till surgery, So far I am already down a total of 20lbs since I started this journey.
