Enjoy!!! There are so many wonderful recipes that are chickpea based, the quickest I've ever seen was a vegan chicken salad. I make a really nice "Greek No Pasta Salad" with chic peas all the time. They are super filling and I do feel like it keeps me regular. I personally just rinse them off, let them air dry for a few minutes, put them on a parchment paper, use spray olive oil to coat, season them, and shake the pan every 10 minutes while in the oven. I usually bake them at 400 degrees for approx. an hour. You will find if you like them crispier or not.
