Ill add that my friend is Mexican and when i arrived at her house I was devastated because for Mexicans, chicharron is just the pork skin/pork rinds, no meat at all. She made the Pork rinds and these pin wheel things made out of flour. They call the pin wheels chicharron as well. For Peruvians, chicharron is mostly meat. Basically fried pork chunks with no skin and a little fat, sometimes including the bone. For salvadoreans, chicharon is similar to the Peruvian version but it gets shredded. For Colombians, Dominicans, Puerto Ricans, and I believe Filipinos, chicharron is the pork belly with fat, crunchy skin, and meat. Ive heard of duros too and the longer version, chicharrones de harina. When i went on vacation to Mexico city I forgot what I learned going to my friends house and ordered chicharron street tacos.
