My kids “mystery box” ‘ed me tonight, so this was dinner- cheesy stuffing waffles (crispy, delicious… recommend), air fryer buttermilk chicken legs, Caesar roasted broccoli, balsamic cucumber and Tomato salad. I also used about a tbsp of BBQ Sauce for my chicken leg

Gonna use the leftover waffles for Breakfast sandwiches this week

Waffles recipe - 1tbsp butter, 1/2 onion finely diced, box of stovetop or similar stuffing mix, 2 eggs, 4oz cheese, vegetable broth to moisten

Sautéed onion. In butter until lightly browned. Add a bit of broth to get up any goodness in the bottom of the pan. Pour into bowl with stuffing mix

Preheat waffle maker

blend eggs with cheese until smooth. Mix into stuffing mix. Add broth until soupy. Don’t worry. After it sits a few minutes it thickens. I think I used 3 cups for 2 boxes.

spray waffle maker and scoop in stuffing mix. Used about a cup a waffle. Cook for 6-8 minutes until crispy and delicious.

This is the only time I miss bread. An egg & lettuce sandwich or a cucumber sandwich, on white bread, are heavenly. I used to soak my cucumbers in balsamic vinegar for an hour or so before.

Mmm? Now I’m wondering if it’s worth the groaning & complaining tummy & general blah feeling of eating bread just to have one of them.

Totally not worth it 😝

I couldn’t always tolerate bread (and I still don’t eat soft breads) but over time it’s become easier.

I like cucumbers soaked in sesame oil and lime

(the brie one got a little too melty and caramelized, but the others turned out well lol)

Tea sandwiches? Do you mean finger sandwiches like you’d have at a high tea? Oh, just googled it. They are the same.

Can’t say I’d blame you @GreenTealael. cheese waffles just sound wrong. Don’t get the savoury waffle thing.

I can literally smell this through my screen! The look amazing.

Do you struggle with who eats the food you make?

not usually...Mr. eats a lot, and when The Kid is home, she's a decent eater. i almost always make stuff with the intention to share with friends and family (i am known as the "dessert fairy" 'round these parts, leaving containers of homemade treats and baked goods at their doorstep, hahahhaha...this started at covid - social distancing and all that - and i just kept doing it..."drop off and go"!)

im also big on freezing stuff for later!

It is fresh chicken broth that we make at home and freeze or kettle beef broth that I boil and add spices to (mainly cinnamon and a little cajun) and bake the chicken in. The secret is to pour a little spiced broth while you’re baking your chicken (don’t simmer) so that the chicken juice mixes with the broth and result is extremely flavourful tender chicken
