This salad looks insanely good!! I’m obsessed with salads and I’m pretty jealous RN. I will try to recreate a version of it tomorrow! Thanks for the inspo!!

Tilapia w/ mashed potatoes and vegetables. This is the maximum I can eat, and I ate it all. I think I’m slightly underestimating the potatoes but my food scale broke and I haven’t replaced it yet? Anyone still using a food scale?

i do!

not as often as back in the day, but yes, i'll use one if my guess-timating powers are off, AND if have access to one, AND i,m not feeling lazy. all conditions must be true lol. works out to maybe 3-4 times a week i'll use one.

but i don't use measuring cups or spoons anymore...i'm pretty good at visualizing volume, ha!

Dinner:

Baking spicy shrimp pizza for the fam. The base is thin tortilla like topped with pizza sauce, shrimps, bell peppers, green chillies, cherry tomatoes, topped with a mix of cheddar and mozzarella. I will probably crumble some feta on top (I loooove feta). I might have a couple of bites once they’re done baking!

All the time! There are a few things I eyeball (e.g., salad greens, Skinny Girl salad dressing) or go by the unit (e.g., half a Tomato, 2 celery stalks) because the calories are so negligible that even if I'm way off, it won't make a significant difference, but I always weigh out Protein portions and even most vegetables, and ingredients in recipes. I'm not super meticulous about tracking every gram of everything I eat anymore, but I actually think using a food scale is easier than eyeballing most of the time.

Only use a scale when cutting some large portions of meats into smaller portions before cooking. Generally I eyeball or use my hand as a comparison. Like palm size piece of meat is about 3 or 4ozs. A cupped palm is about 2/3 cup. Etc. Depends upon the size of your hand of course but it’s pretty accurate for me. Handy when dining out. And I count. 4 Beans, 2 asparagus spears, 4 slices of zucchini, 10-12 blueberries, …

Oh and olives. Yum. Salty balls of goodness (no South Park references). Especially in a martini. LOL!! Little sweet Ligurian, big fat salty green babies, mid sized oily babies. But never those in a jar. Shudder.

Dinner:

Cheesesteak filling with caramelized onions, mushrooms and light cheese on Boston lettuce. Ate this entire one and 2 broccoli florets (around 150 calories)

That’s it. We can’t be friends now. 🤣🤣🤣. Maybe it’s the jar olives we get here - always wizened up & dry & have an awful non olive taste.

Your delicious looking chia parfait reminds me I haven’t made one in a while. Mmmm. I’ll add it to the list. Still haven’t made pickled cucumbers yet.

        Fairlife Core are by far the best. They taste just as they are - chocolate milk. You can either get the 26 grams or the 42 grams (harder to find and more expensive).
