I’ve been really bad about cooking lately, but I’m just back from vacation and did some meal prep. Baked sweet potato topped with ground Turkey with onion, garlic, Tomato paste, beef broth, peas, carrots, and mushrooms. From the Skinny Taste website.

Having grown up in Midwestern USA there are some things that are just inescapable- like tater tot casserole. It’s not as terrible as it sounds when it comes to most midwestern dishes. 😂

Weird salad addition alert- romaine, spicy peanuts, chicken thigh, mandarin orange, sesame ginger dressing, and… roasted red potatoes.

Went to a Peruvian/Japanese fusion rooftop restaurant yesterday for lunch. (Not the best day but interesting views over the city.) I wondered how the fusion would work but it did. Still very obvious Japanese or Peruvian foods but a sharing of some styles. Like a bao bun with a Peruvian filling. I can’t eat spicy foods so shared some edamame to begin & had parmesan & garlic scallops (sorry no pxts) & sesame crusted tuna. I about half the tuna, the two scallops & probably too many edamame 😁. All very yummy.

Hahaha one element of that mix has to go and because I'm Irish I'm suggesting the orange (never the potato!!) 😂

5 years out from sleeve. Breakfast:) Avocado toast on focaccia with pickled onions, feta and red pepper flakes. Some salad topper pecans, pepitos and cranberries, tomatoes and cukes...and a mini glass of powerhouse super juice. Yum!

Lunch- cucumber sandwich with a parfait of yogurt, peaches, hemp seed, flax seed, raisins, and honey.

Dinner- as listed. A whole serving of chicken was 8oz and I knew I couldn’t eat it. The Indian chicken is seasoned with equal amounts cumin, dried ground coriander, turmeric, curry powder(not in recipe), garlic powder(not in recipe), and onion powder, then with salt, pepper, and 1.5tbsp olive oil to coat. I baked thin slices at 400F (200-205C) for about 18 minutes. The original recipe called for pan frying in more olive oil.

I love cucumber sandwiches @Starwarsandcupcakes. Soak the cucumber in balsamic vinegar & only on white bread. Would even pour some the vinegar on the bread for more of a zing. Very sad now. Damn bread but don’t think it’s worth the discomfort to eat it. Waah! 😩

2 eggs
15oz part skim ricotta
1/4 cup grated parmesan
1tsp ground garlic
1tsp black pepper
Dash of basil
1tsp Italian seasoning

Mix all these well.

Spoon 1 to 2 teaspoons into each spot on a mini muffin baking pan that you’ve sprayed with Pam.

Sprinkle a touch of reduced fat mozzarella on top of each.

Bake 20 minutes at 375.

I’m thinking of making a bariatric cooking/recipe blog. I love cooking and being inventive and really want to stay within my approved foods. So it may be neat!

The first is leftover Indian inspired chicken, rice, and sautéed zucchini.

The second is a bowl of soy ginger chicken and broccoli and a bowl with cottage cheese, strawberries, and crushed graham crackers.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
