Food Before and After Photos

Meals the past week or so. I think I’m gonna give up on the lotus root for a bit as it’s never as soft as I want and the glaze it’s really glaze-y. And those meatball looking things are really squid balls. The sheet pan pancakes have become a staple with various mix-ins (these were pumpkin spice latte ones).

Y’all, today was a good day! I made a red lentil stew (I’ll post a picture of that when I pack) for my lunches, made the stuffed peppers for tomorrow’s dinner, and made shrimp fajitas for dinner. ….And then I baked…

I haven’t baked much since my dad died as it was one of the things that connected me to him. We always talked about new recipes, ones he missed that I’d make him, and just the overall joy of how food brought us closer as people. Then, today, it dawned on me that I’m not doing his memory justice if I stopped doing what I loved which is feeding people. So I did want any (in)sane person would do and made 15 and 1/2 dozen Cookies, chocolate filled crescent rolls, and a double batch of chocolate Peanut Butter fudge. I’ll have excited coworkers for sure.

@Starwarsandcupcakes Your food always looks so interesting. You eat such a variety of foods, I am envious of that! I always eat the same crap over and over.

I can’t stand eating the same thing all the time. I just get too bored.

The lentil stew I made for my work lunches this week.
1tbsp oil. 1 onion, 4-6 stalks celery, 2 large carrots 2 yellow bell peppers- all diced. garlic minced (measure with your heart). Cumin, ground coriander, curry powder, ground turmeric, pepper, bay leaf, 2 cups red lentils, 4-6 cups broth. Salt to taste.
Add oil to large pot over medium high heat. Add diced veggies and sauté 2-3 minutes. Add garlic and sauté 1-2 minutes. Add spices and cook another 2 minutes. Add lentils and stir to coat with spices. Add broth and bring to a boil. Reduce to a simmer and cook about 15-20 minutes.

😂 when it comes to foodstuffs I call it a stockpile. 😂 And with kids it doesn’t always last as long as I’d like!

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.

      Woohoo! I have 7 more days till surgery, So far I am already down a total of 20lbs since I started this journey.
