Food Before and After Photos

Its BBQ season!

BBQ beef brisket (in the slow cooker for TEN HOURS, then finished off on the grill, which, btw, was inspired by that glorious slab of meat posted by @MarvelGirl25 a couple posts up...) + grilled garlic butter corn (a little burnt, oopsies) + a tub of cole slaw i got on sale at the grocery today (too lazy to make one from scratch)

...also toasted Buns for the fam (but sans bread for me) with some Gorgonzola for that touch of funk, lol. Anyone else a big fan of stinky cheeses??? I say the stinkier the better.

WOW! All our faves. Both your briskets looked to die for! That's one lucky fam. I've never met a cheese I didn't like. Pungent or otherwise, but my favorites are Swiss, Cheddar and Parmesan. Romano is heavenly, too. Now you've got me contemplating grilled BQ shrimp and street corn for Memorial Day. Might you share your BQ sauce recipes with us?

4 garlic cloves, minced
0.5 cup apple cider vinegar
1.5 cups ketchup (i use the no-sugar added ketchup from Heinz)
0.5 cup brown sugar (i use .5 cup stevia + 2 tbsp molasses, there is also a swerve brown sugar out there, but I haven't tried it yet, but should be fine)
2 tsp black pepper
2 tsp onion powder
2 tsp mustard powder
2 tsp cayenne pepper (use less if you don't like it too spicy)
1 tsp smoked paprika
1 tsp cumin
1 tbsp Worcestershire sauce

(the fam likes it sweet, so sometimes i may add a little bit of honey in there)

mix it all up in a saucepan, let it simmer on med until it gets all syrupy (fyi it thickens more as it cools)

Note: for this recipe, I added all these ingredients into the slow cooker along with the meat and then thickened it up afterwards when the meat was done (this way it has all that meaty goodness infused in there also, especially because I had a rub on the brisket...)

Recipe/Pics look Soooo fabulous! So I don’t mess it up, what was approx starting weight of your brisket? And 10 hours on which setting...i.e., high an hour then low? Hubby has been asking me to do something in the slow cooker and THIS will make him one Happy man! Thanks for sharing your extraordinary culinary skill!😍

Hmmmm....i have no idea how much it weighed! (i bought a giant brisket from costco and used about 1/4 of it). But size-wise, it was about 4-5 hands across, and about 3 inches thick, LOL.

10h hours on low.

I put a rub on the brisket night before and let it sit in the fridge overnight:

1 tbsp brown sugar (or stevia & molases or swerve)
2 tsp smoked paprika powder
1 tsp onion powder
1 tsp garlic powder
1/2 tsp cumin powder
3/4 tsp mustard powder
1 tsp salt
1/2 tsp black pepper

Next morning, put the meat in the slow cooker with the BBQ Sauce on the bottom, squishing the meat on top of it, fat side up. After the 10hrs, i put the sauce in a sauce pan to reduce, then put the meat on the grill for about 10 mins on each side basting constantly with the thickened sauce.

If you try it, share pics, please! I love looking at pics of everyone's creations...

Crispy Ginger Pork over steamed rice (no rice for me though) with a side of ginger-lime-mint cucumber & scallion salad.

P.S. I don’t know why I don’t use mint more often...makes salads taste so much “fresher”...

Looking at all your salads pictures is making me shiver. A rather chilly 13degrees in Brisbane at the moment (feels like 10). Not as cold as some of your experiences but damn near freezing when summer here is in the mid thirties or higher. And it’s not even winter yet. Brrrr.

Thanks for your brisket recipe @ms.sss. Here we corn (salt) our brisket cut & simmer the meat very gently on the stove for 3 to 4 hrs. Our family recipe adds brown sugar, vinegar, garlic & mustard to the pot. I sometimes add fennel & coriander seeds and a bay leaf for an earthier flavour & use balsamic vinegar. Made one last week. Couldn’t be bothered making the traditional white sauce (with carrots & onions) to accompany it. Just stuck with the other traditional accompaniment: mustard pickles. 😁

Do you use the simmer stock for a sauce/gravy afterwards?

Veg burger. Yeah, it looks a bit sad and stripped down without salad and pickled cucumber and I would've liked some more red onion on it but we're going on vacation tomorrow so I didn't want to buy any additional food for the weekend. Just using up already open packages and the rest of fruit and veg I have.

I have some zucchini and fake-parmesan and I guess I'm going to eat this with rice tomorrow if the zucchini hasn't gone off but it should have kept in the fridge.

        Not yet. I was told I only have to do 24 hours of a liquid diet. But I have my pre-op tomorrow so I’m going to confirm if I need to do longer.

      Down 33 lbs and slightly stalled, but I'm gonna reevaluate and push through. I started back to work last week after 2 years of being disabled due to mental health as well as my weight. It's a great job and I'm just so happy to have this opportunity at a second chance at life. Hope everyone is having their best journey ❤️ Together, we got this!

      Hi everyone! I’m brand new here. I just went through all my pre-op requirements per my insurance company and now everything has been submitted and I’m just waiting for final approval and my surgery date. I’ve been doing research, watching YouTube videos, TikTok’s, ect.. trying to prepare my mind and what to expect so I’ll be ready for the surgery. I was so sure and so set and so ready and excited. However, now that I’ve done everything & it’s almost here, I am sooooooo scared! I know why I want it bc I’ve tried everything and I just don’t feel like I can lose weight by myself. I’m tired of being overweight my entire life. I’m miserable, but I keep psyching myself out afraid of GERD bc I know how that can be and I don’t want to have to get a bypass after already gaining the courage to even get VSG. I’m scared of complications like I’mgoing to regret doing it and be depressed that I didn’t just be more disciplined and try again to lose the weight on my own even sitting here typing this knowing in my mind i just can’t and don’t possess the discipline. I’m also afraid I won’t be able to handle the restrictions of the sleeve. What do I eat? I don’t know how to eat healthy really and don’t enjoy healthy food. I don’t know how to do this! I feel so defeated!Someone tell me they felt anything similar to this or am I not ready? I thought I was. I am so tired of being sick and tired and so tired of myself and so tired of being stuck and stuck in this body and somebody different on the outside from what I feel inside. I just want to ball up and cry.

        Am feeling this right now. My surgery date is 4/1. Sign the consent tomorrow. I feel like I overloaded myself with too much info, too many opinions. Got to the point where I was wondering if I should do this. Then I thought of my reasons for taking this step and that settled my nerves. Still get moments of doubt but am striving forward. Am just going to follow my book from the surgeon. Joined this because I was told by my dietician that I should do this for support
