Food Before and After Photos

So, having to think outside the box on my new dairy-free life. Got so much dairy in the fridge, I was like ooh I could have a pretend quiche, egg, spinach and cheddar! YAY :D oh damn cheddar is dairy :(

So egg and spinach it was and it was very nice even if a bit rubbery because I did it the lazy way in the micro. I seem to be fine with eggs just find them super filling so can never eat a whole one. As you can see below :D

Maybe try a vegan cheese? It looks yummy!

Thanks! The one on the left is chicken apple sausage, Brussels sprouts, and sweet potato (1 lb of each) tossed with lemon olive oil salt and pepper. The one on the right is ground chicken sausage with carrots, bell pepper, jalapeño, garlic, and onion with salt and pepper sautéed and then added to the ramekin. I then top that mixture with shredded mozzarella and add a scrambled egg mixture of egg, plain non fat Greek yogurt, pepper, green onion, paprika, and ground mustard and bake. I make the egg bakes every week for Breakfast so I switch up what meat or veggies I use each week for some variety.

Breakfast this morning!

Homemade eggwhite delight (made with egg whites, HEB blackforest ham, 2% kraft deli deluxe cheese) and 1 cup of arugula spinach blue cheese salad. There were no survivors.

Baby spinach salad with chopped leftover chicken tikka (2oz), ash goat cheese from this weekends farmers market (.75oz), 6 almonds, chopped, and 1.25oz raspberries, tossed with 1.5 tsp white peach balsamic vinegar and 1tsp Croatian olive oil. ~295 calories. Yum.

My chaffle maker came today. It's stinking cute!!! But we have a dinner meeting...so no chaffles for us today. :( Wah. Wah. Wahhhhh.

Woke up to a hankerin' for chaffling this morning. I tried the original (whole egg and cheese) in the photos below. And while I wanted to love them, the bottom line is that there is probably a learning curve to find your favorite and learn the timing on your waffle maker. Cuz even though it looked good and was crunchy, I still tasted the "browned egg" flavor that I'm not a huge fan of.

So then I made a different version--a riff on my fluffychix "cheese bread" from my super old blogspot.com blog. And was too thin. Then I added a tbsp of almond flour and 10g of Protein Powder and accidentally created Quest Protein chips. ROFLMAO. They are dry like quest chips, but very light and crunchy (and too dark). I went from cooking 7minutes (totally shambolic) to cooking 4 minutes! Oy!

So more learning needed, but I made a total of 7 chaffles this morning between 2 recipes. So there's gonna be lots of chaffle eating this week! I'm already calling MOM. LOL. ;) IYKWIM and I think you do! hehe.

Oh btw, they are SUPER filling. No way could I eat a whole recipe! I ate one and I'm just on the border of whoa and crap (too much fat/cheese). We'll see how it shakes out in the coming hour. I am hopeful that I can use one on my turkey hatch burger as a bun!

I am SO sick of chicken, actually I’m sick of eating so much meat. I’ve hit a culinary wall.

I went through a 3+ month phase of wanting everything to be spicy, now even medium spicy is overwhelming to me. I’m such a picky eater, (texture & taste) it’s hard for me to think of alternative recipes and sources of Protein.

I won’t eat cheese, (except melted mozzarella mixed with something ) yogurt, mayo, avocado or sour cream to name a few. Cheeseburgh is a combo of being from Wisconsin (aka cheesehead) while I was living in Pittsburgh.

Anyone have ideas? Maybe lentils would be good.

Tofu dishes, omelettes, fish...

Legumes are wonderful especially combined with quinoa ... but if you dont eat a lot of carbs you may experience Water retention from them

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
