Noodle-less Lasagna

I didn't use a recipe, so this is more of ingredients & instructions (yes, as easy as it looks @GreenTealael :) ). You make make this lighter/healthier, or richer/fattier. I'm in maintenance, so mine wasn't as low cal as it could have been.

4 Different Layers

Ricotta Layer

Ricotta (skim, fat free, or whole, I'm sure a non dairy sub like silken tofu would work as well)

Parmesan cheese

eggs

Frozen spinach (I dry sauteed to take out all the excess moisture, it was almost crunchy)

Black pepper

Mix together

IMG_4286.thumb.jpg.d361b5827ec059027ad1209e5fab3135.jpg

Sauce Layer

Italian Sausage (pork, turkey or meatless, hot or mild)

Onions

Jarred Pasta Sauce (I LOVE TJ's Traditional Marinara, tasty, cheap, and super low cal)

(Can add mushrooms if desired)

Sautee onions (& mushrooms), add sausage, cook through, add sauce and simmer)

IMG_4280.thumb.jpg.3157d7e1f6d749a5b3f06edfc3174ba6.jpg

Zucchini Layer

Zucchini sliced lengthwise (any other summer squash would work, or portobello mushrooms)

Airfry or dehydrate to remove excess liquid

IMG_4267.thumb.jpg.0b9edc273add74b0aafcd010f3a2eb02.jpg

Cheese Layer

Mozzarella Cheese (Can add additional, I added Quatro Formagio from TJ's as well)

Instructions

Layer each different component, topping with cheese.

Bake at 350 until melt-y and bubble-y

I have jumped on the Chia pudding Bandwagon!

Base Pudding has 5 ingredients: Chia seeds, cashew milk, stevia, vanilla extract & salt.

I added some chocolate-flavoured Protein Powder and some pumpkin seeds. 4.2g Net Carbs, rest of macro data in screenshot below.

It's delicious, but is more filling than I thought it would be....ate a little more than half of it (the MFP data is for the entire serving though, will probably eat the rest tomorrow).

I tried Chia pudding with almond milk and it turned out like a big lump with liquid floating on the top. I used a recipe that had a little a lot of positive reviews. I know how to measure and follow instructions, I can’t figure out what went wrong.

When the mixture was put in the fridge, I gave it a mix/shake after 15 mins then again 15 minutes after that. I think if i didn't it would have turned out clumpy as well.

This keeps happening to me as well. I wind up having to freeze it in the end which tastes pretty good but I just can’t get the consistency right 😒

I stir the chia seeds with a little almost boiling hot Water first (to plump them immediately instead of waiting) then add the milk

This seems to speed the proccess up for me.

Great to know! I was just stirring every 5minutes until plumped. PIA. But totes worth it. :)

Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
