Autumn vegan energy bars:

oatmeal, oat flour, ground pecans, raisins, pure Peanut Butter, chia seed, hempseeds, pumpkin pie or fall spices, *maple Syrup, cacao.

*Optional, this recipe is super customizable, make it your way!

Combine all dry ingredients in bowl, slowly add hot Water until dry clumps form, add all other ingredients until dough forms, press into dish , bake 375 for 15 mins. Drizzle cacao on top. Share with friends.

Chicken Cauliflower Fried Rice

  • Level: Easy

Ingredients

1 medium head cauliflower, stem removed

3 teaspoons canola oil

2 large eggs, lightly beaten

3 cloves garlic, minced

One 1-inch piece fresh ginger, peeled and grated

1 cup frozen mixed peas and carrots, thawed

1/4 cup thinly sliced scallions

1/4 cup plus 2 tablespoons low-sodium soy sauce, plus more for serving, optional

2 tablespoons sesame oil

2 cooked chicken breasts, diced (I used a rotisserie chicken)

Hot sauce, for serving, optional

Directions

  1. Cut the cauliflower into chunks. Working in batches, pulse the cauliflower in a food processor until coarse in texture, like rice. This recipe uses about 4 cups of cauliflower rice. If you have any leftover, save it for another use.
  2. Heat a wok or large skillet over medium-high heat. Add 1 teaspoon of the canola oil. Add the eggs and quickly scramble. Transfer the eggs to a plate and set aside. Heat the remaining 2 teaspoons canola oil. Add the garlic and ginger and cook, stirring constantly, about 1 minute. Add the peas and carrots, scallions and cauliflower. Stir-fry until the vegetables are tender, about 5 minutes.
  3. As the vegetables are cooking, whisk the soy sauce and sesame oil together in a small bowl. Stir the sauce and chicken into the cauliflower mixture. Cook an additional minute or 2. Stir the cooked eggs back into the mixture. Serve with hot sauce and additional soy sauce if desired.

This is the basic recipe I use with a few changes. I purchase frozen cauliflower rice from Trader Joes. I have made it myself with the food processor in the past and it is just a PITA and gets EVERYWHERE and my poor little dog goes haywire :rolleyes:. I also use frozen stir fry veggies from Sams instead of peas and carrots. I also add extra Water chestnuts because I love them. Super easy and really good....husband loves it as well. Next time I am going to use shrimp instead of chicken.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
