We used to eat at a lot of salad bars when I was a kid and I always put cottage cheese on my salad and that orange french dressing was my fav. So now, as an adult, thats how I like my cottage cheese. CMUGiRL 1 Posted November 3, 2007 One of my favorite recipes is Cottage cheese pancakes. Make sure that you undercook them when you are on the mushy stage so that they smash well with your fork. The recipe is loaded with Protein too! 2 eggs, 1 cup cottage cheese, 1/4 teaspoon salt, 2 tablespoons of Water, 1/2 teaspoon vanilla, 2 tablespoons sour cream, 3/4 cup of flour, 1/2 teaspoon of baking powder, 2 tablespoons of sugar free Maple Syrup. In a bowl, mix all of the ingredients. Put some spray butter in the frying pan and cook until both sides are golden brown flipping once. Serve with unsweetened applesauce. This is so yummy. Not to mention, you can add more sugar free Maple Syrup before servingp; but I find it sweet enough mixed in the batter. My husband and son add more to their pancakes though. Also, my husband does not touch sour cream or cottage cheese and I never tell him what I make it with just that its pancakes. Well, try it and let me know what you think. I am like Jachut in that i used to buy a 'tub' of it, let it spend a few weeks in the fridge then toss it before it changed life forms. I couldnt get around it until recently. I found they sell it in small containers similar to activa yogurt in four oz individual containers and I LOVE THOSE, they are so fresh. I just put a packet of splenda in it and grab my baby spoon and im good. Something about KNOWING each serving is fresh matters to me for some reason. Maybe im weird.
