Greek “no pasta” salad

Here's the recipe I made over the weekend. It was delicious.

Dressing:

2 tbsp lemon juice

2 tbsp red wine vinegar

1/4 cup olive oil

1/2 tsp oregano

1/4 tsp Greek seasoning

I just did a few shakes of black pepper.

I made two batches for the bowl pictured

There was:

-cherry tomatoes

-kalamata olives

-chic peas

-cucumber

-edamame

-red onion

-feta cheese

There is 39 grams of Protein in a cup of chic peas; 17 grams in a cup of edamame. IMG_2371.JPG
