Recipes with coconut flour anyone? :)

Recommended Posts

I just recently purchased the smallest package of coconut flour for a recipe and I have no idea how I'll use it all considering that recipe flopped :(

Anyone think of a recipe they like that uses coconut flour? I'm open to suggestions! I checked pinterest and it has a lot of baked goods which I'm not really into (only 3 months post op) and a lot of "bread" or what's supposed to be a bread substitute I guess.

Halp! :D

My favorite coconut flour recipes

"fried" chicken or fish. Works best in an air fryer but could be baked. Basically dip it in egg wash, throw some coconut flour on a plate and season it. Dip it throw in an oven or air fryer with VERY VERY little oil and you have a healthy fried chicken/fish.

Other easy recipe is a Protein mugcake.

1 scoop Protein Powder, 2 tablespoons coconut flour. 1 teaspoon baking powder. Mix all in a coffee mug add some milk stir until a THICK batter. Add some vanilla extract or flavoring of choice. Microwave 30-40 seconds and done.

Personally I love coconut flour, tastes fantastic low calorie filling and high in Fiber

I personally like using Almond Flour more. Downside is it has more fat. Upside more Protein. You can use less egg, whereas coconut flour you need more because it is more absorptive.

For all the foodies out there, here's a good article about the pros and cons of both:

My absolute favorite recipe to use Almond Flour is by Kayln's Kitchen:

These nuggets are delicious! I make them once a week!

Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
