This is not 100% 'set in stone' but, with most surgeons/clinics, you stop eating between 9pm and midnight the evening before your operation. I am to have my last preop meal (a shake) between 4 and 6 pm the evening before surgery. Water only until midnight and then nothing else. There are also instructions for drinking the smallest sip of water possible to take certain required medications. Others are not allowed. It is all detailed very clearly in my instructions, and my surgery isn’t until 11/17.
