I made Thai green curry tonight:

1 medium sweet potatoe diced small

8-10 baby red potatoes halved

green Beans sliced ( as many as you want)

1 large clove garlic diced

1/2 " ginger diced

1 jar Thai Kitchen green curry paste

zest of 1 lime

juice of half of lime

1 can of unsweetened coconut milk

3/4 cup Water

cilantro to garnish

heat 1 tablespoon of olive oil in a pan add the garlic and ginger. Simmer for one minute add the curry paste stir and simmer 1 minute. Add the onion and potatoes, sweet potatoesstir and lime zest and cook for 5 minutes, add the coconut milk and water. Simmer stirring frequently. Add green beans after about 5 minutes depending on how done you prefer them. Simmer for on low for about 15 minutes. Add the lime juice and cilantro. Serve over a bowl of brown rice.

That looks so good!!! I am going to make it soon. My dh is a big sweet potato fan. The recipe calls for yellow sweet potatos. I don't think I have ever seen those. I will use what I have and I bet it will still be good. It is 49 F this morning so Soup weather is officially here lol :D

I had very ripe bananas on the counter and always make something quick and easy with them. Usually it’s my banana Cookies which consists of mashed bananas, rolled oats, and cinnamon. That’s it! But I wanted to do something different. Let’s do a banana bread. Soooo, I found this vegan banana bread recipe. I was kind of iffy about it due to the reviews, but mine came out fantastic! The things I changed after reading the reviews: did a cup of sugar, added cinnamon, and maybe 1/2 cup of mini chocolate chips (whatever I had leftover in the pantry) and baked it for 65 mins

Simple Vegan Banana Bread.

Sorry for the sideways view. Oh yeah, no oil!

lunch today and a preview of my lunch I prepped for the week.

Chickpeas and corn cooked in a small amount of BBQ Sauce, chunky cucumber, cherry tomatoes and purple onions. This bowl has a small amount of brown rice but my lunches will have fresh spinach instead.

I stumbled across a great website totally dedicated to Whole food Plant Based eating.

Two months out from hiatal hernia repair.  Surgeon said to expect a lot more flatulence...something about the 'air' no longer being able to 'burp' out so comes out the other end.  That is my experience but have no understanding of why that swallowed air cannot be 'burped'. ???

As I understand it since your stomach is smaller and not completely resting against your diaphragm anymore you no longer have the ability to "push" burps out as well. Plus, since its smaller and we don't digest slower the trapped air moves a lot quicker out of the stomach so its no longer available to burp out. Hence the other option for removal.

Me too girl!! Are you in the full liquid diet right now? It’s sooooo hard!

      2. LadyVeteran1

Not yet. I was told I only have to do 24 hours of a liquid diet. But I have my pre-op tomorrow so I’m going to confirm if I need to do longer.

Down 33 lbs and slightly stalled, but I'm gonna reevaluate and push through. I started back to work last week after 2 years of being disabled due to mental health as well as my weight. It's a great job and I'm just so happy to have this opportunity at a second chance at life. Hope everyone is having their best journey ❤️ Together, we got this!
