OmaJ 130 Posted October 1, 2017 I had very ripe bananas on the counter and always make something quick and easy with them. Usually it’s my banana Cookies which consists of mashed bananas, rolled oats, and cinnamon. That’s it! But I wanted to do something different. Let’s do a banana bread. Soooo, I found this vegan banana bread recipe. I was kind of iffy about it due to the reviews, but mine came out fantastic! Now I take about 3 very ripe bananas, mash them up. Sprinkle in cinnamon (more or less depending on how you like it -or you can do pumpkin pie spice), and add rolled oats until it’s a drop cookie consistency, I guess. Place them on a parchment lined baking sheet, kind of flatten them down to cookie shape, and bake on 350 for about 10-12 mins. You can throw nuts, choc chips, etc in them as well. Really easy peasy. Do your cookies just have oats, cinnamon, and banana? Newme17 3,444 Posted October 2, 2017 Today’s dinner: Kale and Sweet Potato Stew Hubby made it while I was at the gym. He said I didn’t have any curry...what!? I always have curry. I know I bought some, it’s somewhere hiding. Anyway, used seasoned salt instead. Tasted great! I still enjoyed it, but I bet it’s better with curry. 😊 Sometimes it doesn’t look as good as the recipe pic it came from, lol. Newme17 3,444 Posted October 6, 2017 Left work early today so I was able to cook dinner. Felt nice...probably cause I have this sense of pride (that I should humble myself on) that I cook better than my husband. Lol. He does well, but he used the wrong onion the other day. Lol. He says they all taste the same and I had to educate him that they’re all different. Anyway, I ended up using a different onion cause he used the one I had... i made sweet potato and black bean chili. The recipe was easy and quick, although it was good (I added to it) it wasn’t the best one I’ve had. I’ll stick to the other chili recipe I have or try another sometime. So, I used a red onion reluctantly, added more cumin and definitely added chili powder and more salt then what it called for and omitted the canola oil. Everything else was as-is. Tasted great. I experimented a little and this is what I came up with. 4 ripe bananas 2.5 cups oatmeal 2 tsp cinnamon 1 tsp vanilla extract 1/4 cup unsweetened almond milk raisins walnuts I cooked them for 15-20 at 350. my dh has been devouring them.
