After about 9 weeks, I am finally cooking again. Made egg salad for Breakfast and this Thai Red Curry Stew for the rest of the day.
It is a vegetarian recipe, but I loaded it with baked chicken breast and thighs. Very, very tasty. Really been craving some veggies!

It's amazing--after spending so much time not eating real food at all, we crave the healthy food with a voracity we never had before :P enjoy, sounds yummy!
