Picky eater that doesn't want to be!

I've never really liked a wide variety of fruits and vegetables. Fruits are a little better, but when it comes to veggies, I'm basically at potatoes, corn and peas (all of which basically count as starches, not veggies), broccoli, green Beans, carrots, and onions sometimes. There's a whole lot out there that tastes terrible to me. But I know to keep this all going I'm going to have to eat a variety of veggies! I'm sort of scared to even post this because I'm afraid the answer is "just suck it up and eat them", but does anyone have any tips for a veggie snob to learn to love them?

Roasting veggies is a great way to learn to eat them. Roasting brings out their natural sweetness. Layer some asparagus on a baking sheet. Sprinkle with olive oil (maybe a tablespoon or so), salt, pepper and a bit of garlic powder. Pop in a 350 degree oven for about 10 minutes. Amazing.

Grilling is another good way to get flavor. Slice zucchini long ways (into long strips) brush with Italian Salad Dressing and grill for a few minutes. Also, there are some great recipes for "zucchini fries" on pinterest - you toss them with a bit of parmesean cheese.

Cauliflower rice - amazing - again - just watch a few videos on how to prepare so you don't turn it into mush, which is not pleasant. I like to turn it into "mashed potatoes" or stir fry it with fresh spinach and add a bit of cheese to make a gratin.

Toss mushrooms, onions and green Beans with olive oil, a bit of balsamic vinegar, salt, pepper and garlic powder and roast in the oven for 10 minutes at 375.

Those are just a few thoughts. Go on pinterest. Go scout recipes on the food network. Always try something more than once.

Put them in Soups, puree some into the broth too. Butternut squash Soup is good. Broiled/roasted tomatoes are good too. Parmesean or romano grated on any toasted veg adds a nice nuttiness flavor.

I agree that roasting and grilling are my go to way to eat veggies. Roasted Brussel Sprouts are about one of the best things I've ever eaten. There are so many ways to dress them up a little. Sprinkle some parm cheese on them, use some balsamic, even roast them with dried cranberries. So good.

During the summer we grill up a lot of veggies. Peppers are great grilled, so are mushrooms, asparagus, corn, broccoli, carrots.

I'm weird that I like veggies more than fruits. Asparagus, fresh green Beans or Brussel sprouts roasted on a pan or in tin foil on the grill. I like olive oil and a bit of parmesan, salt and pepper. We are also nuts for sweet peppers and eat them like carrots or healthy chicken fajitas. If you don't have one get a good processor or chopper and you can put veggies in about anything. Also you can make cauliflower crust for healthy pizzas.

Thank you all for your suggestions! I'm gonna have to give everything another try with these techniques. If I still don't like them, well, I'll have to start finding ways to hide them in :)

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
