LilEngine 20 Posted April 5, 2017 As a single parent I'm always looking to make things,with minimal ingredients, maximum taste...so here's something I made during my pre-op phase that was sooo tasty I froze it until I get to my pureed phase post-op (8 days to go)Broccoli (I went with frozen because I wanted to make a lot)1 can Cream of Celery (look for low fat/low sodium varieties if you want)1 white or yellow onion diced Salt n pepperIn your med or lrg saucepan saute onions in olive oil until soft, maybe 5-7 minIn the same pot, add broccoli, Water and boil your broccoli until soft, maybe 10 minPour off waterIf they are soft enough you can mash them with a fork for big broccoli tidbits or pop them in the blender for pureeIf you're going to puree, add abt 1/4-1/2 cup of cream of Celery before blending. *Taste, as you're adding cream of Celery, it can be very overpowering!
