I asked my beautiful wife to make me chicken cordon bleu for dinner tonight and boy did she come through! I had an idea to use pulverized wasa crackers as breading and Greek yogurt and shrooms as the basis of a sauce. Damn good stuff!

So she used yogurt in place of sour cream? What did she use for the cheese? I'm salivating a little here BTW.

Yeppers! She went traditional on the cheese, it was swiss with black forest ham.

I have done it using ground almonds for the breading but i use full fat swiss cheese for sure.
