SleeveSoon 191 Posted September 19, 2016 I picked up some squash this weekend from a local farmer's market. I cooked a large Cousa squash tonight, it was the size of an elongated football. It had an awesome flavor. Does anyone have any idea how many calories this type of squash has? I checked MyFitnessPal, but didn't find this particular type of squash listed. I also bought a Delicata squash. Does anyone have an idea on how to cook this?
Caribear 184 Posted September 20, 2016 I would use the entry for summer squash, it seems to be the closest. Allrecipes has a nice collection of recipes for the delicata squash: http://allrecipes.com/recipes/16676/fruits-and-vegetables/vegetables/squash/winter-squash/delicata-squash/
SleeveSoon 191 Posted September 20, 2016 @@Caribear Not many calories in baked summer squash. Makes me feel pretty good since I have a lot of it left over. For the delicata squash I am going to try the recipe for baked squash stuffed with quinoa, shallots, and pine nuts. Thanks for the info!
AmiLou 41 Posted September 20, 2016 I love that you are adventurous...trying a new vegetable without knowing how to cook it! I love zucchini, summer, and spaghetti squash. I'm sure it will be delicious. My George Foreman grill is my favorite method. I spray it with a little butter favor Pam and season with Tony Chacherie seasoning (a Cajun spice). It's an fast and easy fix.
SleeveSoon 191 Posted September 20, 2016 @@AmiLou I enjoy trying out new healthy foods. I reached out to this forum, because I know that folks here usually have some healthy ways to prepare foods. My son is a professional chef, so I always have a source for how to prepare foods. Unfortunately his recipes are not always bariatric friendly.
