highfunctioningfatman 2,675 Posted September 18, 2016 We did a version of the ricotta bake tonight. I'm not a big fan of marinara so instead we used classical light Alfredo sauce. esskay77 785 Posted September 18, 2016 Riotta cheese Bake Baked Ricotta with Marinara This is the one that everyone RAVES about! 8 oz of ricotta cheese ½ cup grated Parmesan 1 large egg, beaten 1 teaspoon Italian seasoning Salt & pepper to taste ½ cup marinara sauce ½ cup shredded mozzarella cheese Mix ricotta cheese, parmesan, beaten egg, seasonings together and place in a oven proof dish. I'm two weeks out and I feel like Oliver Twist at the orphanage, as if I am on a diet of gruel lol. I realize it will be awhile before I can eat this, but I was beginning to think Campbell's Soup was my future for life, and I never liked Soup very much anyway! Looks great. I hope you enjoyed it! I used 1/4 c of parm instead of 1/2 c and other than that it was identical and is my new favourite recipe. It seems like it should be so high cal but it's not. However, based on the ingredients, I would probably make it in an 8x8 inch pan. Or a casserole dish that can go in the oven. I might be wrong on this but that is what I would try first. But, if others have made it, feel free to speak up! Or, you can check on theworldaccordingtoeggface.com -- I bet she has this on her site and might have more info. Her blog is called "the world according to eggface" - she has several variations of the ricotta bake on there now. Lots of good recipes and ideas for all stages post op - including a frequent posting called "a day in my pouch" - which she goes over everything she eats that day. when I made it - i put it in a glass loaf pan but a small square casserole would work too - maybe 8x8?
