Cooking for the family and friends

I spent some time on the smoker and grill! Blackberry bbq chicken boobies, smoked bacon wrapped mushroom and parsley stuffed chicken thighs. We had a bunch of family and friends over. They enjoyed. Not pictured was a nice salad that was on the table. Those mashed potatoes? They aren't potatoes, that is mashed cauliflower. My mother in law always peels her potatoes. We grabbed the skins and cut them up into the cauliflower mash. Nobody knew until we told at the end.

Are those green Beans on the small plate? Notice anything?

That is the first batch of asparagus. chicken boobies don't need feet!

I'm glad you said "first batch" of asparagus. I thought I was looking at chicken for 15 or so people who eschew vegetables that don't resemble potatoes.

We did 3 batches total of the asparagus. What was really cool is that the faux potatoes were a hit, 90%of a big ol salad was gone, the chicken was loved by all and that the only carb heavy item was the broccoli balls, they are always popular but we just made the one batch so they are gone. If I can find an alternative to the stove top stuffing used in the balls then perhaps those will be healthier too.

Thanks on my username! It is true though, my fat wasn't causing me "problems" but it was a problem in itself.

Never heard of broccoli balls, but if they have any relation to chicken boobies in your parlance, I suppose I've only had girl broccoli. Never had stovetop stuffing, but what about seasoning up some quinoa? It's not low-cal, but it is nutritious and not loaded with sodium as I imagine a packaged stuffing mix is.

Broccoli balls are

Broccoli (obviously)

Stove top stuffing

Parmesan cheese

Egg as a binder.

Throw is all in a food processor, make balls and bake on 325 for 12 minutes or so.

You just flung a craving !!!

I'm gonna make a batch of broccoli balls with the ribs I'm smoking tomorrow. Gonna hit the grill store in a couple hours and get my rubs and some decent charcoal.

I'll wait until I've sauced the ribs and then crack open the vents and get the temp to climb and thrown on the broccoli balls. The wood smoke will have been long gone by then. That's my plan in any event.

The faux mashed potatoes is a stellar idea. I will be trying that soon.

Grilled boneless chicken is a staple that grill weekly as I suspect it will be around your house, too.

Way to go on the cauliflower -- very sneaky (though as a bander those skins would probably not work for me). Love the production cooking mode, have fun!

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
