Sophie74656 1,572 Posted May 4, 2016 (edited) One of my favorite things is a version of an eggplant salad take an eggplant and prick it with a knife a couple times, then roast it in the oven until the insides are very soft. then toss it in a food processor with a spoonful of mayo, some salt, and a squirt of lemon juice. Sophie74656 1,572 Posted May 5, 2016 you can also make a version of a greek sauce (taziki?) with cottage cheese grate some cucumber so it's mush and mix with cottage cheese, dill, lemon juice, garlic, and salt to taste. You can mix in some plain greek yogurt for some Protein sorry for not giving the amounts I never write them down.
