What can I do with...Ricotta Cheese

I just ran across this recipe and it reminded me that I haven't eaten ricotta cheese in a while.

I made Shelly's Ricotta Bake not long after surgery but that was it.

I will have to try this.

It also, looks like a great option for people who need something to take to a potluck.

Thanks so much for just telling me the name of the bake. I was trying to do a search on it and couldn't find it. When you just posted the name I searched again and found it. I told myself this morning I had to find some recipes to get me through the last few days of this food phase I am in.

That other bake looks good to but I have no idea what that cheese is.

Does anyone know does this website have a recipe section? I haven't been able to find it.

Thanks for the info. I have been on this site for many many years and never knew this forum was even here. I guess it would have helped for me to look a the top of this thread. Nothing like NOT seeing what is directly in your face.

This recipe calls for whole fat ricotta. You think you could use fat free for this?

I made shelly's baked ricotta last night. Even my kids ate it! its good!

I sauté ricotta cheese with fresh spinach and crushed garlic. Yummy!

1/4 cup cottage cheese

1/4 cup ricotta cheese

1 tsp. sugar free lemon pudding powder

mash together(looks like cheesecake)

top with sugar free jam or fresh fruit, tastes like cheesecake!

I found a ricotta bake on Pinterest that I can't wait to try. Different from the one already mentioned

8 oz of Ricotta cheese

1/2 cup grated Parmesan

1 large egg beaten

1 tsp of Italian seasoning

Salt and pepper to taste

1/2 cups of marinara sauce

1/2 cup shredded mozzarella cheese

Mix ricotta cheese, parmesan, beaten egg, seasonings together and place in a oven proof dish.

Pour marinara on top and top with mozzarella cheese.

Bake it in the oven @ 450 for about 20-25 minutes (best) or nuke it till hot and bubbly. I usually made it first in the oven and heated the leftovers in the microwave.

Serving Size:�makes 4 1/2 cup servings

Number of Servings: 4

NUTRITIONAL INFO Amount Per Serving

Calories: 227.5

Total Fat: 13.3 g

Cholesterol: 88.8 mg

Sodium: 567.5 mg

Total Carbs: 5.0 g

Dietary Fiber: 0.5 g

Protein: 19.1 g

What food phase can that bake be had? Soft foods (3 weeks)? Because I am SO making that.

@@Daisee68 How'd you do? I'm two weeks post op as of today. I haven't been eating much because I'm not hungry and broth, cream of chicken and greek yogurt can only be interesting so long. Need to "make" something.

      Day 1 of pre-op liquid diet (3 weeks) and I'm having a hard time already. I feel hungry and just want to eat. I got the protein and supplements recommend by my program and having a hard time getting 1 down. My doctor / nutritionist has me on the following:
      1 protein shake (bariatric advantage chocolate) with 8 oz of fat free milk 1 snack = 1 unjury protein shake (root beer) 1 protein shake (bariatric advantage orange cream) 1 snack = 1 unjury protein bar 1 protein shake (bariatric advantace orange cream or chocolate) 1 snack = 1 unjury protein soup (chicken) 3 servings of sugar free jello and popsicles throughout the day. 64 oz of water (I have flavor packets). Hot tea and coffee with splenda has been approved as well. Does anyone recommend anything for the next 3 weeks?

        All I can tell you is that for me, it got easier after the first week. The hunger pains got less intense and I kind of got used to it and gave up torturing myself by thinking about food. But if you can, get anything tempting out of the house and avoid being around people who are eating. I sent my kids to my parents' house for two weeks so I wouldn't have to prepare meals I couldn't eat. After surgery, the hunger was totally gone.

      I have my final approval from my insurance, only thing holding up things is one last x-ray needed, which I have scheduled for the fourth of next month, which is my birthday.
