deana_m20 17 Posted February 24, 2016 (edited) Just wanted to share a turkey meatloaf recipe I made this evening. Meatloaf ingredients 1 pound lean ground turkey 1 can rotel(w/green chiles) drained 1 egg beaten 1/2 cup onion about 1/2 cup quick cooking oats Teaspoon of salt and pepper Topping for meatloaf: 1/3 cup ketchup 1 tablespoon mustard 2 tablespoons brown sugar Directions: Mix all ingredients for meatloaf and place in a loaf pan. Mix topping ingredients and spread over meatloaf. Bake at 375 degrees for an hour! This meatloaf is sooooo delicious and goes down so easily on my little pouch! deana_m20 17 Posted February 24, 2016 I have made this with the juice of the rotel drained and not drained. If you like a little spice to your meatloaf just add the juice from the can! CowgirlJane 14,260 Posted February 24, 2016 Actually, I have found the best meatloaf...and I don't care much for meatloaf. My recipe is restaurant worthy but does take some culinary skills as it also "presents" beautifully which not all meatloaf does. I won't bother with the whole recipe since it isn't particularly healthy but essentially you roll the meatloaf mixture out flat on a baking paper and put on a thin layer of sauteed mushrooms, onions and some cheese and roll it up like a jelly roll cake. You are supposed to top it with bacon, but that might be just too much. I bake it right on the paper on a baking sheet and it holds together and if you let it rest a few minutes, will slice nicely and look like the jelly roll cake. It tastes like the best cheeseburger you ever had. I make it about once a month and the kids devour it and I love it too. Share this post Link to post Share on other sites

Her favorite thing I make is meatloaf and my recipe is delicious however I have some culinary chops and she has been learning from me since she was big enough to stand on a chair (3).
