Winter Campfire Cookout

I need to bring a dish to a winter campfire cookout event at a local Winery. Other people are already bringing chili, can anyone suggest something that I can cook ahead of time and then reheat on the campfire (i.e. gas grill) at the Winery? I was thinking about something like shredded chicken, but would love to hear other suggestions.

This may be your answer & also help others who can't cop greasy food anymore:

I have one of these Charbroil Big Easy Oil Less Turkey Fryer's & use it for cooking chicken legs, thighs & other chicken portions rubbed with oil/lard & seasoned with salt pepper or whatever.

Tried but no success with pork/beef except large cuts like rib roasts & rolled pork or leg roasts & of course just fabulous with turkeys.

Chicken cooking to temperature [72-74*C internal] takes less than 30 minutes, depending on quantity cooked.

Check with meat thermometer for perfection [or possible under cooked, needing more time].

Even if you overcook & get up to 85*C internal, or more, the chicken will still be lovely & not dried out, like in a normal BBQ.

Chicken will be fabulously moist meat & next to oil less....that oil is in the removable collection tray.

Does it have to be a main dish? I'm a big fan of bacon wrapped/cheese stuffed jalapeños. You can prep them ahead of time and throw them on the grill when you get there.

one of my favorites is "Sesame baked chicken", recipes on line.

chicken in general remains a non-favorite for me, but this version is similar but superior to the commercial versions it emulates.

Basic skinless thigh bite sized chunks tossed in a bag with a little flour/sesame seeds/herbs of your choice up to & including paprika/chili powder/hot stuff/salt/pepper to taste, then baked.

How about a taco Soup? I brown lean ground beef in a pan and add taco seasoning. Then dump the meat in a CrockPot with a can of corn, can of Rotel Tomatoes, can of pinto Beans, can of chicken broth and a package of dry Ranch Dressing Seasoning mix. Alternatively, I have used shredded rotisserie chicken and just added the taco seasoning to the Soup.< /p>

And another suggestion is Skinny Buffalo Chicken Dip. (I don't remember all the ingredients but I can find it if you want it.) it is shredded rotisserie chicken, greek yogurt, low fat cream cheese, Franks Red Hot, lite Mozzarella cheese and package of dry Ranch Dressing Seasoning Mix. You can serve it as a casserole or a dip. With a dip, you can take cut up veggies and some tortilla chips or crackers.

My last suggestion would be just a big pot of Pinto Beans (or your other favorite). Take cut up onions and jalapenos to add. (Can you tell I am from Texas? ;) )

Could you do hobo packets (foil wrapped pouches)? You could make chicken, fish, or other meat with vegetables. I'm not sure about cooking and reheating but you could prep ahead of time and then grill when you get there.

The skinny buffalo chicken dip would be a good choice on a cold Winter day. I can prepare this in advance and then reheat it. Thanks for the suggestion! I found the full recipe and it will be easy to prepare.

      Just been waiting until time for my consult with my bariatric surgeon. It's scheduled for Jan 9th. Turns out I won't actually be seeing him. Apparently it'll be with his P.A.             Not sure what to expect. I thought this is where the surgeon would discuss the best surgery option for me. For years I had my heart set on the sleeve, but I've read so many people have issues with reflux - even if they've never had it before - that they've had to be revised to the bypass. I already deal with GERD & take 40 mg of Omeprazole daily, so I started studying about bypass and honestly, it seems like it might be the better choice for me. How can we discuss surgery options if the surgeon is not there?
      What happened at your first consult? Trying to get an idea of what to expect, or maybe I should say, what NOT to expect.
